peppers recipes and questions

    Ok, so I went a LITTLE crazy on the veg shopping this month and now find myself with a few veg to eat up quick smart. Thing is it will have to be something that freezes as I have already got one curry cooking as we speak...

    So to be used are

    6 small red peppers
    Quite a few carrots
    Half a white cabbage
    A courgette
    Mushrooms

    No onions! How can I make anything without onions????? I do have garlic and ginger though

    Any ideas for something that will freeze well - I was going to do some soup but all my soups always start with me sweating off an onion as the base

  • All these veg could go in a chunky veggie casserole made with veg stock cube, tinned tomatoes and some dreid herbs/spices and garlic (and some sherry or red wine if you've got some for cooking!).

    As for the red peppers, my mum buys the big economy bags. However, as there's just her, she chops them, puts them in individual portions and freezes them in small sandwich bags and uses them when she needs them the same way as other frozen veg.

    If you like fennel, Delia's stuffed red peppers is a delight but I'm not sure I would try to freeze it.

    Coleslaw with the carrots and cabbage?

    Pasta with tomato sauce with the mushrooms and courgettes fried in olive oil, some herbs and a splash of balsamic vinegar?
    May all your dots fall silently to the ground.

    Red pepper and sweetcorn soup. Will require investment in sweetcorn and obviously will be a total failure without onions, but is definitely worth it!

    Roast the peppers and remove skins and chop and add to couscous along with the courgette sliced long ways and grilled a bit to char slightly. Can do the same with the mushrooms.

    Grate cabbage and carrot and add mayo to make coleslaw
    Saving in my terramundi pot £2, £1 and 50p just for me! :j

    And if you have more carrots left, grate some with cheese if you have any. It will make your cheese go further and it's healthier too.

    I bought a load of yellow label peppers from Mr T the other Day. I roasted them, but have no idea what to do ith them. I was thinking that bread thingy, where you layer it, put a weight on it and cut it like a cake
    . Any suggestions

  • If it was me I'd put a bit of olive oil, bit of salt on them and just eat them like that.

    And probably all at once as soon as they're done, and then mop up the juice with bread. Love peppers but they never last long!

    Sorry I don't have any more interesting suggestions! I usually use them to accompany a meal or add to salad or pasta.

    - if they are whole or halved you can stuff them with a mix of rice, other veg and cheese - yum yum
    - make up in a rustics bread style sandwich with maybe some roasted red onions and cheese.
    - stir into pasta with some olive oil or pasta

    do you have a recipe for that? not quite sure what you mean but sounds interesting!
