  • I like stuffed peppers and particularly like them stuffed with a mixture of onion, chopped and fried in a little olive oil with mince, tomatoes, chilli powder, a dash of tomato ketchup, salt and pepper and rice - you make it really liquidy and don't cook the rice, then fill the pepper halves and cook in a medium oven for about an hour - the rice swells up and absorbs the liquid and the pepper halves go lovely and soft - it's nice with hm garlic bread.

  • Many thanks for all the suggestions. We had stuffed peppers for dinner tonight, stuffed with red onions (a cheap bag from Lidl), cherry tomatoes - 20p a punnet from Asda (on offer), covered with Mozerella cheese - 20p from Asda (on offer) with a side salad 20p a bag from Asda - not too bad over all!

    Hi Dolly, that sounds good.
    If theres any left chop them and place them on a baking tray and freeze them flat. Then you can use them at a later dater date and they aren't all stuck together.

    i forgot to tell the veggie people and i got 2 big green peppers in my box this week.
    i love every other colour of pepper but just cant stand the bitterness of green ones, the last one i had i left to ripen and it startrd to go orange but was so wrinkly rther was no way i could have used it.
    so my question is........what can i do with them to discuise the bitterness?

    I've never tried it with green peppers in particular, but if you roast peppers, they become a lot sweeter, so I dont see why it wouldnt have the same effect on green ones. I just stick a pepper on a baking tray in a hot oven for about half an hour, or until the skin is wrinkled and a bit chargrilled. Then when its cooled down a bit, you can peel the skin off- and its delicious!

    I put them in tortillas with chicken and salsa or even jerk chicken ones (sometimes helps to put a tiny bit of sugar in when frying them off to take the bitterness away) enchilladas, spag bolognese especially when done in SC as they seem to loose the bitterness then. They aren't my fave either, much prefer the others.

    If you can barbeque them then they are lovely. The other thing if they are too bitter is to take the skins off them. I do this by putting them directly on the gas and blistering the skin. Then run it under a tap and it peels off.

    I roast them in the oven, peel the skins off and then cover them with olive oil and thinly sliced garlic. Pop in fridge 24 hrs or longer and then eat them on toasted bread. Tastes great IMHO!
