    I always chop them up for chilli or spagbol. I fry them off with onion first and I find this gives the pepper a sweeter taste.

    I have tried roasting them but still find them bitter. They are great in a chilli, the bitterness doesn't seem noticeable when cooked like this.

    Hello all,

    I've ended up with about 6 peppers in my fridge to use up - did a recipe search but not much came up when I tried searching on peppers... anyone got any good ideas?

    I thought about soup - any recipes welcome! Also adding them into a casserole but looking for something a bit different - skewered kebab type things maybe? What do they go with?

    Part of the Furniture Name Dropper Combo Breaker
    i was lucky enough to get a batch of 76 red peppers for £5.99 and 94 tomatoes for £2.99 from a store near me.. so i had a batch cooking/chopping session.. the tomatoes were halved, cooked down in a little bit of oil (no extra water - you get plenty from the tomatoes) so they were slushy, some chopped red pepper put in, and the whole lot whizzed (to make a puree type thing) and put into tubs in the freezer. The remaining red peppers were either chopped or sliced and put into individual bags in the freezer, handful (equivalent to approx 1 red pepper) to a bag. more info (and photos) here.

    Anyway, the pasta sauce is gorgeous - i used the first batch the other night, just gently fried some chopped onion, garlic, leek, courgette, aubergine and mushroom, added the sauce, some mixed dried herbs, worcestershire sauce and cooked till the pasta was done. Stirred together with some parmesan shavings ontop the whole thing was absolutely GLORIOUS.

    ... since i note you're in manchester, I'll tell you where i got them from.. they weren't the best quality in the world but, hey, that doesn't matter so much for stewing down. I also don't know if they still have the offer on but its worth a try.

    I don't know where you live in Manchester, but if you go to the ashton old road, and starting at the Manchester end, drive towards Ashton, after a couple miles you'll pass an Aldi on the left, then go over a bridge. After a road to the left, there's an ugly yellow building, used to be a pub (the packhorse, i think). That's the asian food store i got them from. You won't miss it as it has fruit and veg outside. Its in Openshaw if that helps.
