    Roasted red pepper and butternut squash soup is heavenly with some bacon crumbs chucked ontop

    too many red peppers is a problem i could live with !! stuff them, make soup, use them in any home made savory cooking (curry, casorole, lasagne etc) put in salad, eat them raw and if you have no inspiration chop and freeze untill you do.

    Roasted peppers, I used to do this recipe quite a bit at one time
    Cit peppers in half lenghtways, take out the seeds, If I had time I'd skin them if I didn't I just carry on, place peppers in a dish cut side up, put a small tinned tomato into each pepper (or a bit of tinned tomato) add some slivers of garlic, herbs (anything to hand) pour some olive oil over everything, you can also add some anchovies to peppers if liked. Roast in hot oven until they look yummie. Eat as a stater or lunch with some nice crusty bread to soak up the juices.

    Hmmm, that sounds absolutely delish!
  • Cut in half lengthways & fill with risotto, bake for 15 - 20 min. Yummy

    I use my homemade stock to cook risotto rice. I add anything I have to hand
    maybe leftover chicken from roast or veg chopped small (teeny allotment carrots
    etc. too small to do a lot with)
    Add a bit of butter/ garlic butter to top to keep rice moist.
