I have made this and delish it is too. :drool: This is great for picnics (bit messy, just take along some wipes). But I layer mine up with thinly sliced steak or chicken breasts and onions together with the peppers. you could try roasted pepper soup - works for red peppers - i've never tried with yellow pepper.
1 small onion
2 medium size peppers - deskinned
stock cube
saute the onion - add the chopped pepper, stock cuube and water cook for 10 min; puree in a blender; bring it back to boil in a pan, season with ground black pepper. at the end add creme fraiche/single cream to finish and garnish with chopped parsely.
for a low fat version, omit the creme fraiche/cream and add some milk.TH0 -
Also you could freeze some to keep for garnish or pizza toppings! I like roasted peppers on top of home made potato salad.0

OK Heres what I did.
I bought a fairly chunky white loaf from Mr T, cut off the top crust horizontally about an inch from the top. I scooped out the bread so there is like a crust shell with a deep hole in it. I spread pesto on the bottom, put a layer of peppers on top, put a layer of caramellised onions on top of that, put some green olives on top of that, put some more peppers on top of that, put some beef tomato slices on top of that, put some left over mozzarella siles on top of that, put some basil leaves on top of that, and put back the top crust I had sliced off in the first place on top of that.
I then wrapped foil arround it tightly, and put it in the fridge.
Now either I can just cut it like a cake, or bake it gentley for about twenty minutes tommorow. I have told my GF it is an experiment, and she has promised to taste it, and I have promised not to moan if she doesn't like it.

Oh, she'll love it. Fantastic for vegetarians, otherwise I would put a layer or two of meat in mine. Great cold for lunch but this would be enough for an evening meal, baked in the oven as you suggest. :TIt's nice to be important, but it's more important to be nice.:kisses3:0

Well the GF ate it, and I thought it was great. It had been in the fridge over night, so you could have sliced it cold. I put it in the oven with skewers in for about an hour.

Hi all
I popped down the market today and got a whole carrier bag full of peppers in above colours for a quid! bargain!
Now of course they will be used for the usual enchiladas/ stirfry blah balh
But I wondered whether theres any other new & exciting things to do with them
I wont be able to stuff them as they are a bit mangledy shaped, but any other snazzy ideas?:beer: Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.
