peppers ...... does it matter which one?

As someone who prefers to use what they have in, does it realy matter which colour pepper. If it says red and I only have a single yellow one thats the one I use. Should I really try and get it correct? Does it really make a diiference?

i cant see why it should. I always bung in whatever I have in the fridge, and I can't say I can tell the difference whether I've used the recipes specs or my own interpretation.
But I coud be wrong....maybe its my taste buds!I ave a dodgy H, so sometimes I will sound dead common, on occasion dead stupid and rarely, pig ignorant. Sometimes I may be these things, but I will always blame it on my dodgy H.

I prefer red -yellow and orange are almost as good but green are totally different (to me). Green are, well, different, sharper, maybe, I don't know but I don't think of them in the same way. Red, yellow and orange peppers make me think of tomatoes, basil, summer ... green peppers make me think of the back of the fridge.0

Yeah, definitely prefer any but green - reds are the sweetest, having been ripened longer, but I don't worry about what colour I use in general.0

I always thought they were the same thing - just at slightly different stages of development. I remember often seeing part green part yellow ones about on the shelves. Somebody please tell me I'm wrong

Yep, thats my take on it too Squeaky, the same thing but at a different stage of its 'life'. They do taste different too as others have said.

Hi all, I grew some peppers and they did start off green and then turned red. I think maybe the yellow & orange are a different variety. So the green is the unripened pepper which is probably why it tastes more bitter.0
