    A mix of all the above...
    Ripeness and variety
    Under the name pepper you'll also find longer thinner ones, and the hungarian type of paprika, and so on.

    Think apples for example: same fruits but tastes are difinitely very distinctive (although you eat them all ripe).

    Green peppers ( the younger version of the red pepper ;) ) will stand up to slow cooking better then the red pepper (the mature version of the green pepper :D )

    I lurve most peppers, but I'm not at all fond of the green, although it does lurk, unseen, in some of my meals: "what the eye doesn't see, the heart doesn't grieve over" ;)

    They all make me repeat for ages!

    Hey! I did a layered corned beef and potatoe casserole as you suggested. Added carrots and mushrooms. Oh and put an odd bit of mash into the curry sauce to help thicken it up a bit and hid some branston pickle in there too :)

    If you buy the value peppers at Tesco you always end up wuth 2 or 3 green ones. Has anyone tried to ripen them further, maybe the paper bag and banana trick?

    Actually the green ones are very good for childrens foods, good colour contrast should make meals more appealing. Everything the children eat seems to be tomato sauce coloured!

    It was surprisingly yummy! I'm going to have to start making it on purpose now. So... how do I set about generating left over mash, half a tin of corned beef... half a carrot...
