    Don't think you'd be saying that if you'd just spent the last 2 weeks in one, as we have!

    Had hardly any sleep over the Christmas/New Year period whilst in France for 2 weeks. Still trying to catch up on sleepless nights - just glad I don't work any more.

    Agree with you there. I'm a bit of an insomniac and OH snores, I have an app on my phone I use that puts me to sleep like a charm, has a variety of noises but the ones that always work for me are ocean waves, rainfall, waterfall etc. Love it :)

    Made it to mortgage free but what a muddle that became

    In the event the proverbial hits the fan then co-habitees are better stashing their cash than being mortgage free !!

    Morning, good night's sleep although the rain woke Mr T a few times, I just slept on :)

    Dark skies this morning but no rain. Mr T walked the dogs earlier and they were loving running through the puddles. I'm hoping I will be up to walking them with him, in a week or two :).

    Jobs for today:

    Prepare the marinade for the duck confit - they need to sit for 24 hours in 'stuff' before the confit cooking - hope it works :). Done

    Prepare brine mix for the pork for weekend. I'm preparing early as I want it to have a day to dry out before cooking. This is the TK one I tried a few weeks ago, when the crackling refused to crackle. Done

    Prepare veg for this evening - pork chops for kids, lamb steaks for us two. Done

    Ironing: not sure I will be up to it but if not, will empty the airing cupboard :)

    Jobs for me today:
    Pedicure tonight
    Paint my fingernails
    Catch up with a couple of chums on the phone

    Wednesday was a NSD and today will be the same :T

    I checked the freezer yesterday and have more milk in there than I realised, which is fairy bulky. I normally keep 1 spare in there, so milk is off shopping list this weekend :)

    Quietly looking forward to my freezer emptying and giving it a good clean, then restocking :)

    MF news - offset savings are growing nicely. Bonus will be moving in shortly :). Even the kids are discussing money topics now.

    Miss T is getting her stocks and shares ISA research done. She's 18 in a few months time and will be jumping in at that point. She is still saving 50% of income, has a small babysitting job which gives her cash occasionally, planning menus for Uni and getting in to MSE. She's hoping if she gets in to Uni that she can transfer stores which would be good news for her. She's certainly a hard worker.

  • Hiya, these are some of the ones I've tried in the past and can recommend.

    Chicken Teriyaki - p38
    African Drumsticks - p46 - I tend to make the marinade, add it, plus chicken legs and wings into a freezer bag and chuck it in the freezer until we're BBQing.
    Tarragon and chicken - p64 - I use creme fraiche not cream though
    Coconut Rice - p110 - I've made a note on this page to use less rice, or feed more people, 300g rice for 4 is way too much :)
    Spanish Chicken with chorizo and potatoes - p100
    Chicken and chickpea stew - p202 - made a note on this page too - only make half the stew or feed more people, way too much for 4
    South Eastern veg curry - p154


    There's a bit of a chicken theme going on, sorry for that but we do eat a lot of chicken :)

  • Morning, off to the shops in half an hr. I'm popping in to C@stco to buy Mr T some coffee but don't need anything else in there - wish me luck :)

    Duck confit last night - well it was ok but not fab. That's the second TK recipe which has been questionable. If anyone else has made it, let me know how it went. However there was a lot of duck, so I'm making duck pancakes for starters this evening. Five root soup will be for lunch tomorrow and the TK belly pork is for dinner. It's now out of the brine and drying.

    I'm taking £15 cash to the shops (excluding Mr T coffee which is just under £12 for generic stuff rather than £40 for real) and think that's enough. Next Saturday I'll do another freezer inventory and see what space I've got, plus what else to use up.
