Blue Monkey Curries, Casseroles, Pies. I'm doing chicken casserole, chicken curry, beef casserole and a variety of pies probably.

Thanks Gilly. When you say pies do you just do the inner bit or do you do the pastry too? If so what do you cook/freeze them in?

Thanks Gilly. When you say pies do you just do the inner bit or do you do the pastry too? If so what do you cook/freeze them in?

Well I'm Scottish so we use puff pastry with everything not short crust ha so I usually do the filling and pop it into one of those little silver square dishes? Like tinfoil containers, and cut a bit off of shop bought puff, wrap the pastry in tinfoil, defrost both together, roll on the pastry, pop it on top and cook it in the oven, pastry rises lovely.

Then for eating I cut the pastry off and scoop the ingredients onto a plate :)

I hope that makes sense, not good at explaining myself :o if not, just say.

  • I see, so you get both (the pastry and the filling) ready and then cook together when needed. Cunning!

Basically, the pastry doesn't need cooking before freezing, so it can just be frozen straight from the packet, I would cut it up into the size necessary though, bit difficult to cut when it's one large frozen lump (yes I've been in that situation :o ) I normally throw some veg into the pie, and don't bother with potatoes but I'm a lazy mare. You could freeze some mash and just heat it up in the microwave.

Icey, I think you might have a problem taking your Bank Holidays before you have accrued them. HR will probably say that when you leave you will be entitled to be paid for any accrued.

Sorry WW, wasn't clear there was I!

I will be carrying them (and the remaining 6 days I have not booked for 2012) forward to the 2013 holiday year for when I come back after 12 months ML :D
