Maybe go somewhere in England? There are plenty of nice places around and will be half the price of traveling abroad at that time of year.
Even still, Maybe spend it with your family this year for a change?
We always alternate Christmas. My parents house one year, Our house with the IL's the next that way its fair and the others dont feel put out that we're spending more time with one set then the other.
I have never been close to my own parents. So its always at HER house. I've only had two christmases with them, but its been enough. this will be my third, and my heart is sinking at the thought.0 -

OH in agreement - he loves his mother and son (and why shouldn't he?) but he would love a holiday in the sun.
He's not that bothered what he does over christmas.

Yes, really. If he can stay with his mum/that part of the family then all is well. But if not, then imagine being 21 years old and alone for Christmas?

Alone for Christmas? He lives with his gran. He lives OFF his gran, rather. He doesn't work. Never has. Never shows any intention to work. Is a workshy lazy little squirt who we end up having to pay for, because he wont work. (by the way, i've worked, supported myself since I was 18 when I left home to fend for myself). He is sat around on a computer, watching episodes of Friends for the millionth time.0 -

What's wrong with ME? i've not done anything to them. I don't force them to come and spend time with ME. I don't ask them to bring me eggs, and potatoes and onions, and bags of flour... etc. etc.
I am not the one who is a burden on them. Why would they not want to spend Christmas with the taxi driver who ferries them around and the gift horse?

The OP mentioned that the MIL is a strict vegan. Is this the source of problems OP?
Another thought - some times it is easier to get along with in-laws if you invite them to your house (your house, your rules hehe)
Perhaps there are some travel bargains for Florida, have you tried the travel board on MSE?
Jesus. I don't want them in my house. Can't bear the idea. The last time the son came around, he stepped in the dog's bowl and it went flying and then he nearly stepped on a laptop. He doesn't look what he's stepping on. He has really large feet and he is very tall and I can't stand him.
The last time she was around (ages ago) as I wont invite her. She's only ever been here when self invited. She TOLD, not asked me, she TOLD me not to use the dishwasher. What was wrong with washing dishes by hand? I am proud of myself that I managed to hold my tongue. But I hate nearly everything that comes out of that woman's mouth. I absolutely HATE her.0
