So I've decided to do some extra easy days but due to committments (and meal planning) we always have Jacket Potatoes on a Wednesday evening. I usually have cottage cheese, or baked beans with a salad. Would these fillings be ok on extra easy, or can you recommend a meat/fish filling, Ive done tuna/sweetcorn so fancy something different.
Something quick and easy (for 1) would be really helpful.
Many thanks in advance.
Either filling for your JP would be fine but you must have at least a third of superfrees, so a big salad is great. I enjoy JP, cottage cheese and a load of pickled beetroot. For another occasion it might be worth you batchcooking bolognese or chilli or curry and freezing in portion sizes to pour over your potato. In good mse fashion, you can add lots of extra veg to the sauce to help with your SFs.0 -
Thanks maman. I would need to batchcook anything with meat with just me eating it. Chili sounds lovely - pity I couldn't do it for tonight. Will just have to plan it for another week! I've done quorn chili but OH doesn't care for it, but never thought of freezing it (strange - I don't know why?) before.
So far today I've had:-
Breakfast - mushroom + lean bacon omlette
mid morning - pear
lunch - sardines/beetroot/tomato on crackerwheat
afternoon break - nectarine + ww fromage frais with apricot
tea - JP with cottage cheese & salad
Drinks so far - 2 cups tea/3 cups coffee - milk HEA
That doesn't look too good for an ee day though does it - not enough meat. I do get confused with the Red and EE plans because it's fairly rare for me to eat much meat, but I do like it sometimes!
Joined again 11th July and loss so far is 8 1/2 lbs - only need 1.1/2 to change front number so am trying hard to do that for next WI day, next Monday. My goal is to be at target by October when I go away on holiday. 2 stone loss required for that.
Oh well - onwards and downwards is why my consultant says - so keep it up everyone - you are all very inspirational.:T:T:T0 -
Don't worry about the meat Margaret, you've had bacon and fish and what really matters is the SFs. You could always buy yourself some sliced ham or chicken and keep it in the fridge to pick at.
Chilli is even better batchcooked and frozen as it seems to go on marinating and comes out hotter and tastier IMO.

Need to squeeze another B in as i'm not eating the chicken in my stirfry. I've been really funny with meat lately, sometimes i'm ok and sometimes i just cant stomach it. Weird...The trouble with the world is that the stupid are cocksure and the intelligent are full of doubt.Bertrand Russell0
