  • I'm sure you could freeze them. I just don't know what prep they need for freezing.

    Peel the courgettes, grate them then add to a chocolate cake recipe, tastes lush and very moist and you don't need to tell anyone if you don't want :)

    Well I just had to throw my whole mint plant as it was covered, and I mean covered, in green fly :mad: :mad: :mad: . Doesn't look like anything else infected though. Also threw a tenth of a cucumber away- was well yuck! Have updated sig to include these two.

    I've done frozen courgettes by cutting into thick slices and blanching for 1 minute, drain, pat dry and then open freeze on a tray before putting into a bag.

    I cut courgettes in half lengthways,microwave for approx three minutes depending on size,top them with a mixture of breadcrumbs and grated cheese then grill them until browned. Nice as a lunchtime snack or as a veg with a main meal.

    wow thats realy good, get them to eat veg without them knowing anything about it. If I gave my 12 year old courgettes, he would think I was trying to poison him. Give him chocolate cake and he will eat the lot.

    I can't see that being a problem, a bit of lemon juice would be nice too.

    I Just cut them into quarters and the blitzed it when cooked, which makes quite a thick soup. I have also used them thinly sliced in cear soups, but then with other veggies .

    I had to throw away another 2 satsumas today - feeling very cross. Overall my food wastage has dropped loads. I really noticed the difference when I put out the wheelie bin today - it was only half full.
    The meal planning is working really well. I have had to adapt it twice this week because of my daughters being asked out but still nothing wasted. The planning is what is stopping the waste - I just hope I can keep it up.
