I LOVE beetroot but i can't bear it boiled....bleugh...but roasted in balsamic vinegar they are gorgeous...or grated into a salad...yummy!0

Hi everyone, I've just finished the mamoth task of reading this thread from the beginning - there's been loads of great ideas and suggestions. Have been trying to keep track of what we are throwing away for the last week and am sorry to say that it's quite a lot. Most of it seems to be from our veg box so I am going to make a concerted effort to either do something about it or drop it down to fortnightly.
Today I had to throw out 3 peaches and a banana from the veg box (in future I'm going to chop and freeze the bananas before they get so bad that they are mush) but have had a lunch of lettuce and tomato from the veg box and left over avocado and cheese from the fridge. Lunch was with a jacket sweet potato and I'm going to have to have the same thing for dinner with white potatos, but am going to make up a tuna mayonnaise to bulk it out a bit!
I'm going to try to report everything I throw out so that I have to take responsibility for it and see how I go! Thanks to kippers for starting the challenge and for all the advice already - I'm sure I'll be back with regular questions on how to get rid of/use up random food items!

ooh, I'm proud of myself - didn't have any mayonnaise for my tuna mayo so found some tomato salsa from a packet of fajitas we opened this week and mixed it with fromage frais we had in the fridge for stroganoff until Tescos forgot to deliver our mushrooms. The potatos were soft and on their way out and the salad needed using up so I'm really proud of myself.
I did have to throw away half a container of yoghurt that I found hiding in the fridge so thats not as good!
sorry for multiple posts but I'm excited now!

Annie - suggest you just wash them and leave the root on and about one inch of stop stalk. The beetroot will bleed if you try and cut these off before cooking and once cooked they will come away very easily. As microwaves have varying power wattages, I suggest you check them after ten minutes if they're only golf ball size, remembering that microwaved foods go on cooking for a while once they're removed from the microwave and left to stand.0

Beetroot...and dont forget you can steam and eat the leaves. About 2/3 minutes steaming and have with, say, olive oil and lemon juice.0

just about to start making pavlova for lunch, with fresh raspberries which need using up, but what do I do with egg yolks which will be left over.
Can you freeze them?? any suggestions please.It takes a long time to eat an elephant and I'm doing it a bite at a time!!!0 -

Egg yolks can go into scrambled egg, or what about making up a quick batch of cheese pastry cut into straws to provide lunch box snacks?

Hi Annie021063, you can just grate it raw, it's crisp and sweet and really lovely in salad...
There is one other thing which we used to use it for which is a bit random....when i was little my mum used to give me a chunk of raw beetroot to crunch before i brushed my teeth and it helped me brush because it would stain all the plaque and show me where i'd missed0
