Just popping in to see how everyone is doing. Also to say that i'm glad i joined this challenge, as although some food is going in the bin, its only a small amount and a lot less than usual. I have been using up so much food that would have previously gone in the bin. I've also noticed it in my food bill as well, previously i would have been puttin in a tesco shop by now, but i currently have lots of food in.:j Live on £4500, £2531/£4500:T 101 in 1001 (52/101):j:beer::j

Ooooooh went to a 21st party last night - you lot would have been :eek: :eek: :eek: ! I brought OH a doggy-bag home - but oh dear what a lot of wastage. Think my sister will be filling her freezer with butties for lunch for a couple of weeks. Biggest wastage - coleslaws/potato and pasta salads/dips/crisps/tortilla chips/ - none of which can be frozen
. Even platters of sliced turkey and beef left over. She must have thought she was catering for the 5,000!

i had this soup made for me in egypt.......thought i'd give it a try!
last weekend i poached some chicken with onions and mushrooms in the stock, and an eco chicken stock cube.........
i put the excess stock drained off in the fridge with this in mind, and made the soup as follows:
1 tbs olive oil and a knob of butter in a saucepan
When it's foaming throw in a couple of handfuls of the small macaroni
Stir it around until it just starts to colour, then add stock
Simmer it until the pasta is cooked and tender and eat with a chunk of fresh bread
That served one, so adjust accordingly. it's so cheap it's untrue, is filling and surprisingly tasty! I guess you could add sweetcorn or bits of shredded chicken if you wanted it to be more substantial, but it was fine just like that. If anyone makes it with any variations, let me know!

I may have posted this befor but just in case, I'll do it again. I buy the small jars of olives from Lidl/Aldi because I love 'em. When I have emptied the jar (usually very quickly), I keep the olive oil in the jar and use it whenever a recipe calls for olive oil. It's yummy especially if you have the chilli or garlic oils? Haven't bought a bottle of olive oil in months! :j :j :j :j0

We had some friends over yesterday evening & I did a buffet, as usually happens not everyone was able to make it so here's whats left over & how I'm using it up.
6 Chicken pieces, one each today with new pots & veg, the meat will be striped off the bone & made into Chicken Pie for Wednesday. I'll make stock with the bones for soup.
Mini sausages, only a few if these so I will make Toad in the Hole for Monday, I will add a couple of halved bacon rashers, cherry toms (also left over) & mushrooms to the pan before I add the batter.
Tuesday we will have savory bread & butter pudding using most of the leftover bread & cheese. The last few bits will be whizzed through the food processor & frozen to be used as topping for fish pie, cottage pie etc.
The salad I will use in packups for Monday & Tuesday.
As I said it was only a smal buffet for 10 & only 6 turned up, so there isn't much left over.

Bother - had to throw a couple of bits away - found a rather manky lemon at the back of the fridge yesterday - the end had gone brown and slimy so that went (discovered it by putting my finger into the slimy bit - Eeeeeee-eeeeuww!) Then the potatoes I'd previously cooked and frozen were disgusting once defrosted. I took a look and didn't fancy them much but was prepared to give it a go - when OH saw them he pointed out the rather nasty texture they'd developed - so into the bin they went. Even roasted I don't think they would have been edible!
I'll now use this weeks veg box spuds for dinner tonight. It's often those that get wasted - for some reason they do seem to sprout quickly in our larder - not sure why.🎉 MORTGAGE FREE (First time!) 30/09/2016 🎉 And now we go again…New mortgage taken 01/09/23 🏡

been to mums toady so had dinenr there made a quick jam roley poly for afters
my mum and nan are the worlds worst for food wastage my nan who lives alone spends 80 quid a week !! and throws most of it out here frezzer is full tot he top and ive never seen it even half empty !!0 -
Made 8 portions soup tonight using pearl barley, tin toms, sliced carrots from the freezer that were on last legs before I blanched them, chopped and frozen peppers - again on last legs, some rather disgusting irish porridge oats (bulk it up), one large leek, one onion, a small swede, a pot of spicy soup (bought loads reduced but too spicy to eat on its own so I froze them) a couple of stock cubes, herbs, Salt and pepper, water. Simmered for a couple of hours then put half in processor to pulp it and mixed with unpulped soup. Lovely jubly - a healthy, low calorie, cheap and easy lunch/dinner.
On another note does anyone know how to make Naan bread?
I found a recipe on the bbc food website, does anyone know if I can make it up to dough point then freeze and defrost/cook when needed?0 -
I have a lone aubergine that I bought in Lidl, because it was cheap. I was going to make Moussaka with it, but used the mince for something else. I now need some ideas as to what to do with it before it's passed its best.
