    Used the last 3 pieces of streaky bacon for a sarnie for DD. Also have half a bag of fresh peas that need podding for dinner and 3 manky (ish!) carrots. Using 4 Faggots for dinner that have been in the freezer forever:D

    A good day today for using up stuff!

    Pasta with breadcrumbs and garlic
    Rose Prince (The New English Kitchen)

    14oz pasta
    2 garlic cloves
    4 tbspns fresh breadcrumbs (or from freezer;) )
    4 tbspns olive oil
    salt and black pepper
    parmesan cheese to serve
    14oz broccoli (broken into florets) or steamed courgettes or shredded greens

    Bring 2 pans water to the boil and add salt. Cook the broccoli for 5 mins and the pasta for whatever time is recommended on the packet. The idea is both are ready at the same time and can be drained in the same colander. Just before serving, fry the garlic and breadcrumbs in the olive oil until golden. Drain the pasta and broccoli (or other veg) and return them to the pasta pan. Stir in the breadcrumbs and season with salt and pepper. Serve with parmesan cheese.

    Does sound worth a try!

    You've inspired me to have a look in the fridge and I've just found some leftover baby potatoes from yesterday that I'm going to to make into potato salad for tonight.

    The search was tricky to find this thread - but knew I'd seen one somewhere before - didn't know whether to search *left-overs* *leftovers* or *left overs* :rotfl: :rotfl:

    Three things that I have done lately with leftovers:
    really soft bananas I made into a banana cake
    Half a left over beet I made into bread (really delish!)
    Made an oxtail stew for a lunch with a friend and then shredded the left over oxtail onto a baked potato for my supper the next night

    Lurking fridge pie; you simply heat up left over cooked meat and /or veg in a bit of gravy, which might be left over or made fresh. If you are a veggie, or just want a change, you could use cheese sauce. Fry up any uncooked veg that is looking a bit sorry for itself, and any left over bacon rashers (if you have the odd one that is going a bit dry), and add. Put in a few chopped up herbs if you have them, and season nicely. Use your common sense obviously, think about what will be OK together, and don't use anything that is really old and furry, but most savoury things are OK.

    Top with mashed potato and bake in the oven till nice and brown on top, making sure that all is piping hot. You could sprinkle some cheese that has gone a bit dry on top of the mash before baking if you have some (grate it first obviously). Alternatively you could top with pastry - it looks quite posh if you make little cut out pastry leaves to decorate it with. Kids really like to do this last bit by the way, and they are much more likely to eat something if they have helped to make it.

    Today I will be making a quiche using up some lurking grated cheese (leftover from last nights moussaka) with potato salad (using up yesterdays unsprouted sprouting potatoes).

    Must also cook up some apple purree for the freezer using up some sad looking apples.

    When making apple pies/crumbles for the freezer don't throw out the skins and cores. Cook in a little water until soft, push through a sieve and freeze in ice cube trays for use as apple sauce when you next have pork.
    Mortgage and Debt free but need to increase savings pot. :think:
