I need some inspiration and/or recipe ideas for what I can do with a pineapple and a couple of mangoes please

How about a fruit salad.
Or, if you want something different, a Pineapple Meringue Pie.

How about caribbean(sp!) rundown chicken with pineapple:
Coconut rundown sauce*
6 boneless chicken breasts (can use mackrel, or aubergines instead)
2 tbsp white wine
2 tbsp fresh cream
2 tbsp corriander
Handful pineapple cut into chunks
for marinade:
2 cloves garlic crushed
sprig of thyme
1 onion
1 tsp ginger
Dice chicken an marinade for at least an hour
Remove from marinade (reserve marinade)
fry chicken till browned
add reserved marinade and fry for 1 minute.
Deglaze pan with wine
Add pineapple, rundown sauce and cream.
Reduce heat and simmer for 5 mins.
Serve with rice
Followed by mango fool for pudding:
350g mango chopped.
300ml double cream
1/2 tsp vanilla essence
3 tbsp icing sugar
sprigs of mint to garnish.
Blend mango.
Whip together cream, vanilla and icing sugar. Chill mango and cream separately for at least an hour. Just before serving fold two together and garnish with mint

I froze a fresh pineapple last week (I had chopped it up first) and it froze really well.That's Numberwang!0

Have you tried adding pineapple to rhubarb jam instead of ginger, it makes for a great tasting change although it does not store for as long.0

Thanks for the recipe Pretty Pennies, I've just printed out the carribbean rundown chicken with pineapple recipe and will be trying that later in the week. I love meat and fruit recipes.0

That's what I usually do but thought I might try something different this time
The chicken recipe sounds fantastic! :drool: as does the crumble, never thought of making a crumble with them so thanks for that
