    How about a Thai style pineapple fried rice? its one of my favourite fried rice variation :D and easy to adapt to use what you have in the fridge. Works especially well with fresh pineapples, the tinned ones are a little too sweet.

    as for the mangoes... my fav way of using it up, other than just eating it on its own would be a mango lassi. blend chunks or cubes if you are neat, with natural plain yogurt and away you go! great drink for cooling off the heat from the sun or a spicy curry, works for both.

    I remember having this in a dim sum place some time back and really enjoyed it. its basically a spring roll with a chicken and mango filling. but I think the mango would have to be a slightly unriped one to work, ripen ones would be too soft and mushy?

    Pineapple, mango, orange and pomegranete fruit salad with greek yoghurt.
    OR slice your pineapple, sprinkle on some sugar and chopped fresh mint and grill or griddle it until golden ... absolutely delicious.

    Anyone else doing a food "rescue" diary? I tried to find an earlier thread on the subject but failed so thought I would start one.

    Today I popped 3 slightly stale/dry raspberry muffins into a ziploc bag and popped into the freezer to use as trifle sponges at a later date. I have done this before and it works really well.

    I think I have some sprouting spuds to "unsprout", peel and cook into hm aunt Bessies roasties.

    Hoping to find more food to "rescue" when I sort out the fridge later today.

    These little efforts can add up to whole meals in the freezer!

    Hi, Catz! This the thread you were looking for - Leftovers - use it, don't bin it?

    I used some sprouting potatoes to make delicious spicy wedges yesterday.

    I have some leftover steak in the fridge to have in a sandwich with the end of a french stick.

    Thanks for the tip about using muffins - I put some stale-ish ones in the freezer while I hoped for inspiration. It never came :o

    On Saturday I found I had a 4 pint carton of milk just on the turn. It is ages since I've had sour milk. I think this is because I now buy my milk from a farmshop and it is locally produced and unhomogenised so you get top of the milk. I don't know what they do to supermarket milk but it seems to last forever.

    Anyway I made a double batch of muffins and a quadruple batch of American style pancakes with it. All in the freezer now. I still had about a pint left so that went in the freezer too with a note written on the carton saying 'sour milk for baking'.

    I'm hoping to 'rescue' the ends of my loaf today when I make DS's sandwich for his farm trip tomorrow. I'll blitz them in the food processor and freeze as bread crumbs for HM burgers/meatballs/meatloaf

    Does eating leftovers from my Mum and Dad's BBQ constitute as 'rescue'? If so, DH and I had pasta each at work today and the three of us (DH, DS and myself) will be having it again tonight for dinner :rotfl:

    What great ideas! Thanks for the link Penpen i did try a couple of searches but failed miserably! Perhaps the lovely board guides can join them up for us. I have just cooked up a lot of sprouting potatoes for roast potatoes and wish now I had kept some by for spicy wedges! Oh well I will remember for next time!

    I normally use sour milk for scones as it def improves the texture and the rising. Hadn't thought about pancakes so I am going to have a go next time I have some milk that has turned. Also going to pop some in the next batch of muffins. Thriftlady please let us know how successful the freezing went. Brilliant idea!

    I have just made up a small plate of fruit salad using up the almost past it bits of fruit.

    I have some ritz crackers that need using but not sure how!

    I've got half a can of evap milk and some raspberries to use up..think I'll slosh it altogether with a tin of fruit and some icecream I've got lurking in the freezer. That'll do for pud tonight. Thanks for the tip re sour milk..I had to throw 4 pints last week that had gone off:eek:

    If Mum and Dad were going to bin the leftovers then yes definately a rescue job!!:rotfl:
    What a bonus and a night off from cooking! :D

    I have some bags of breadcrumbs in the freezer and read somewhere a recipe using breadcrumbs, olive oil and garlic with spaghetti, must go find recipe.
