Right, have been going through my fridge/cupboard as I'm trying to be organized and found a few bit's that need doing something with that I have no ideas for- 1/2 a jar of white chocolate spread that we all didn't really like, 1/2 a jar of mincemeat from christmas & a bottle of Roses Lime Cordial.
I might make some alcoholic ice lollies with some of the cordial but not sure what to do with the rest as we don't like it for drinking?? The chocolate spread I have no ideas for ( it's gone a bit hard BTW)- the mincemeat probably I should use in baking, but need recipe ideas ( we cook everything gluten free so it makes it harder)

We had a chunk of leftover bacon to use up, and I had a small carton (about 200ml) of turkey stock in the freezer, and a chunk of stilton in the fridge gone past its best. So we made our "Christmas Potatoes" dish last night for dinner. (Courtesy of a January BBC Good Food mag a few years back).
Basically slice spuds very finely (we use food processor for this bit), shred your leftover ham (or bacon), crumble the stilton, and finely chop some fresh rosemary (we've used thyme instead quite successfully). Put one layer of potatoes in the bottom of a greased dish, sprinkle over some ham and cheese, a scattering of rosemary and some freshly ground black pepper. Continue with another layer of potatoes, and then more fillings, finishing with a layer of potatoes. Pour over 450ml of hot turkey stock (I topped up mine with chicken stock from a jar), and bake, uncovered, for an hour at 200C, until spuds are cooked through when tested with a knife. Delish.
We just guess the meat and cheese amounts now (a reasonable amount to the spuds) and enough spuds to fill the family-sized Le Crueset rectangular tray I have. Leftovers reheat well. And we have taken to doing it with unpeeled spuds at this stage for speed and they are fine.

Recently my using up leftovers has been finishing some old garlic which was added to homemade lamb stock. Also, last bit of salt sprinkled on fried vegetables. Last years (homemade) dried blackcurrant powder (10gr) was added to a jelly recipe which seemed nicer than the store purchased jelly packets.0

medsdemon - maybe the mincemeat could be added to plain yoghurt or vanilla ice cream for simplicity? Could the choc spread be added to a blender recipe with a bit of your usual milk as a base for another recipe?0

I had a look back through the thread and found a recipe for Mincemeat Muffins and i now have 22 sitting cooling on a rack:D.
As for the choc spread, maybe that would be a good idea thankyou dannie, make it into a runny sort of sweet choccy milk and use in a pudding..will have to go browse...

How about a yummy white chocolate bread and butter pudding made with that choc spread milk??
Or.......if you have some double cream that needs using up ........I made a lovely choc-o-nut icecream last night with some rather old choc spread that was lurking in my fridge (a friend gave me the cream to use up so FREEE icecream:drool:).

More leftovers used up -
More homemade bread used up from the freezer (made early May 2011).
Ground up roasted sesame seeds (purchased last year) and oil added to create tahini butter.
Fried onions (in the freezer since February 2011) with added eggs to make an onion/egg slice.
Used up last bits of flour, spices and pastes to add to lettuce soup.0 -
I have about a pint of milk that is on the turn. At the moment I'm using it for tea and I can drink it ok (fortunately it's skimmed milk so guess it takes a bit longer to go).
Is there anything that I can use it for otherwise I will end up throwing it at the end of the day?0 -
