Purplekylie22 - I am not to sure how it would work out in a tea loaf or christmas cake recipe. Perhaps somebody might suggest a recipe so you wont be disappointed if you do not get a good result. Also similar to CCP mincemeat vanilla ice cream for a summer dessert?0

Its still good and the jars were well sealed. But i have 6 jars of it! Other than the obvious mince meat pies and mincemeat on top of ice cream is there anything else i can do with it?A little nonsense now and then is relished by the wisest men

I have half a tin of corned beef in the fridge and don't want to make corned beef hash as the kids say they are sick of it, so I thought I would try and make some corned beef pasties like you get in Greggs or similar, to put in lunchboxes. Does anyone know how to replicate them? Do I mix the corned beef with mash and onions or just onions? I have some McDougalls puff pastry mix which is out of date but will be fine so I thought I would use that up.
For tea tonight I have made a blueberry queen of puddings using half a stale lemon drizzle cake which I made last week, and some frozen blueberries which have been in the freezer since I don't know when, which I stewed lightly with a bit of sugar and thickened with a little cornflour and water. I used the blueberry mixture instead of jam on the top of the base, so I hope it turns out okay! I also ran out of sugar for the merringue so used half sugar and half splenda!
Just edited to add that the merringue was a bit odd with the splenda - more like marshmallow!Jane

I am using up the boiled new potatoes from last night's dinner to make a Spanish omelette. I also have some salad left that I will use with it.GC 2011 Feb £626.89/£450 NSD3/7 March £531.26/£450 April £495.99/£500 NSD 0/7 May £502.79/£500

Exactly what I would suggest!
and if you have any leftover then chuck them in a saucepan with enough chicken stock (either homemade or from a couple of cubes) bring up to boil, simmer for twenty minutes and either blitz in a blender or strain through a sieve and you have the most gorgeous roast veg soup!
or............
warm them briefly in the ding and add to cooked rice or cous cous for a delish side dish instead of mash!0 -

Boil the potatoes, fry the onion and then mash the lot together.0
