Hi, I was just wondering whether you can freeze tinned sweetcorn once opened? I opened a tin last night and used some but still have a lot left and OH doesn't like it, so it's up to me otherwise to try and munch my way through it all. Would be handy to freeze some in small portions for use in pasta etc but not sure if it will freeze ok?Feb 2015 NSD Challenge 8/12JAN NSD 11/16

I have frozen tinned sweetcorn before - not as crisp as when opened, but ideal for top of pizzas or in any cooked dish.
Re oats, or readibrek cereal, whizz it up in processor, and add it to flour when baking. I did this with oats when I made bread - my own oaty bread. (I love the Hovis Oaty Bread, but it so expensive, and, round here, difficult to get.0 -
With regards to the excessive cinnamon-y stuff - why not crush it into a semi-spicy sweet rubble and mix it into ice cream? The sweetness of the ice cream mixed with a little of the crumbs should give a lovely texture difference. I've never frozen tinned sweetcorn, but would imagine it's similar to mushrooms whereby it loses a bit of structure and goes a little mushy (as Furndire says)

Not leftovers as such but I'm going to try and use all the meat/fish products i have in the freezer before buying any more.
I have just made a list of what in know is in there and have enough for at least 15 meals.
I'm going to have a rummage and see if i have any pots of single portions which can be added together to make one meal for the 4 of us as well. ( I tend to freeze single portions for Dh to take to work during the colder months but obviously he won't need them for a few months so might as well use them). Now these are leftovers.
After that it could get interesting!!
I'm hoping not to need to buy any meat until the end of June.My self & hubby; 2 sons (30 & 26). Hubby also a found daughter (37).
Eldest son has his own house with partner & her 2 children (11 & 10)
Youngest son & fiancé now have own house.
So we’re empty nesters.
Daughter married with 3 boys (12, 9 & 5).

Not exactly leftovers but definitely in a similar vein...
Put the breadmaker on to do a wholemeal loaf and discovered about 30 mins before the end of the cycle that it hadn't mixed at all, not sure why. So the mixture had just been cooking in layers!
So I took it all out, mixed it up with a bit more water and made it into a dough (although the yeast had been killed by the heat) so I rolled balls of it out flat and dry-fried it in a big non-stick pan to make flatbreads/wraps!
Am so pleased with myself as hubby just said "oh just chuck it away, it's ruined" but I have saved it and made something tastyhooray!

I did this challenge in May. For June, however, as it has always interested me, I will try to use up all leftovers in the house before anymore purchases - similar to mama67. Beverage requirements being the only exception.0

I'm going to kick my leftover usage up a gear again. It really helps my cooking inspiration to know I've got a little of something left over to turn into a great new meal. Here's my contribution:
Last night I made spicy sausage wraps. I had a packet of sausages and did them on the health grill (saving the fat for another use). While they were cooking, I mixed some honey with some tomato puree let down with a bit of water. In it, I sprinkled some cayenne pepper, garlic powder, dried mixed herbs and some salt & pepper, and the coated the sausages cut into chunks in it. These went into the wraps with salad and a few sliced red peppers.
Anyway, tonight, I had some of the red peppers left over and some of the sausage chunks. I've taken 2 part baked baguettes, split them and put a bit of jazzed up passata on. Then I topped them with grated cheese and put the sausage chunks and red pepper slices, 2 rashers of bacon and some rather tired looking mushrooms. Voila, homemade pizzas. They were very tasty.Hopefully I can carry forward something from today to use again tomorrow!
