I would make a frittata using the eggs, spring onions, potatoes, green beans and top it with grated cheese and maybe a few breadcrumbs. You eat the frittata warm rather than hot. Serve it with an easy tomato sauce - put a selection of tomatoes in the oven with salt, pepper and a glug of olive oil, and cook for about half an hour. No meat needed but if you MUST have some meat or fish, you could add some flakes of salmon to the frittata.Mortgage started on 22.5.09 : £129,600Overpayments to date: £3000June grocery challenge: 400/6000

Right then, thanks everybody. :T
I've considered all the suggestions carefully, and nearly made a few of them. But today I'm going for this, because it'll leave me enough of everything to have another go tomorrow. :money:
How about this? Mash up the corned beef with a cooked onion (or cooked spring onions). Very thinly slice the potatoes and place on top of the corned beef in a dish. Whisk up an egg and some milk, pour over the top. Cook in the oven for 20 mins, sprinkling with grated cheese for the last ten mins.
I can't be bothered to muck about with salad, so all I need to know is what temperature to cook it at?If you lend someone a tenner and never see them again, it was probably worth it.0 -

since finding MSE i have tried hard not to waste anything, today i actively encouraged OH to eat the last slice of cheesecake he didnt want to and said it looked disgusting, it was very mushy, but i said we cant waste food anymore,
can you believe i used to chuck the 2 crusts from a loaf away because they aint quite as good as the rest of the loaf, what a wasteful moo i was, also used to chuck meat away that was left over from sunday dinner , not anymore it all gets frozen, even a bit of left over pasta went to the cats as their cat food is getting low,0 -

They are delicious, but am annoyed that the recipe calls for 150g marscapone, and the sainsburys tub size is 250g. So I have 100g left over. Why cant Sainsburgs use a recipe that used the whole tub rather than encourage waste.?
Any ideas for the marscapone?
Hi longhotbath,
This thread should give you some ideas:

Hi missiemog,
I usually use leftover lamb to make shepherds pie. There are lots of ideas on this thread that may help:

Well, it's in the oven, but it's going to take more than 20 mins if the bit of potato I just ate's anything to go by.
I chose this for a few reasons - mainly that I've still got some of everything left for something else tomorrow. Plus I've got a dish the right size.I'll use the other half of the corned beef for sandwiches tomorrow. I've only used three of the potatoes, thinly sliced. I added a couple of chillies that I forgot to say I had.
So I mixed the corned beef with cooked spring onions & chillies:
Added the sliced potatoes, egg & milk:
And put in the oven. After about 20 mins I added a layer of sliced tomatoes and topped with grated cheese. It's just under the grill, browning. I hope it's nice.If you lend someone a tenner and never see them again, it was probably worth it.0
