How about this? Mash up the corned beef with a cooked onion (or cooked spring onions). Very thinly slice the potatoes and place on top of the corned beef in a dish. Whisk up an egg and some milk, pour over the top. Cook in the oven for 20 mins, sprinkling with grated cheese for the last ten mins. Serve with grated beetroot, grated carrot, sliced spring onion and tomato salad! Could also add a little grated cheese to this too.
Hope this helps - let me know what it tastes like...... as it came from the top of my head!Me, OH, grown DS, (other DS left home) and Mum (coming up 80!). Considering foster parenting. Hints and tips on saving £ always well received. Xx
March 1st week £80 includes a new dog bed though £63 was food etc for the week.0 -

To use up the cheese potatoes and spring onions, how about cheese and potato pie.
Cheers Pink. I'm not sure if I've got enough potatoes? I've only got about 12oz. Do you think that'd be enough? If you lend someone a tenner and never see them again, it was probably worth it.0 -
No idea....I always cook for at least four so have no idea what 12 oz of potatoes looks like.
How many are there?

I quite like the sound of this. :T
However, I'm going to wait a wee bit longer before I decide, to see what other suggestions come up. I'll be back in an hour or so, once I've done a bit of the work I'm meant to be doing... :whistle:If you lend someone a tenner and never see them again, it was probably worth it.0 -

It doesn't look like very much! There are 13. Less than half a bag that cost a quid. I'd consider about 6-8 to be a normal portion with a meal.If you lend someone a tenner and never see them again, it was probably worth it.0 -

Afternoon you lot.I hope everyone's having a lovely day?
I was wondering if you'd be kind enough to invent my dinner today please?
I have 13 small new potatoes that need using up.
One onion, medium sized.
Lots of fresh tomatoes - 5 varieties, everything from plum to salad to cherry.
Some smoked Red Leicester cheese that's way past its sell by date but was reduced to 19p so I couldn't not buy it, could I?
Various veg I can grab from the garden - beetroot, runner beans, elderly spring onions (yes, I know, it's autumn), celery, carrots, & turnips.
I've got tinned salmon, tuna, beans & corned beef, plus pasta, rice, kidney beans, herbs, spices & whatnot. I've got some Reggae Reggae sauce that's drawing a pension too. :rotfl:
I'm sure there's a really tasty meal there, but I don't know what it is - yet! Suggestions (with bloke-style instructions!) would be very much appreciated. There will be extra points awarded for anyone who can use up the potatoes, cheese and elderly spring onions. :money:
I might make it tomorrow or Thursday if it looks tricky.
Cheers,
MBE
I would make two meals.
I would have rustled up something in my slow cooker with the tuna, kidney beans, celery, carrots, tomatoes, onion, and a touch of reggae reggae sauce. Serve on a bed of rice, with a beetroot, and spring onion, and grated carrot side salad.
For another meal, I would have made a fish pie, using the salmon, potatoes, onions, milk (if you have some), and cheese, with runner beans served on the side.0 -

If it's a meal just for you it should be fine....if it's for more then there probably won't be enough.
Once you've had some more replies I'll add your thread to the current Leftovers? Use it up! Don't throw it in the bin! thread where the regulars will have lots more ideas for you.

If you have some eggs you could make yourself a lovely fritatta. slice the pots and all the other veg and brown them in a pan with some butter. Then you can mix the eggs with the cheese grated and pour into the frying pan with the veg. Finish it off under the grill and perhaps have some fresh bread with it
OR you could make a version of rumbldythumps. Cube up your potatoes, add all of the veg you want to use up thinly sliced and fry the lot in some butter so that it is cooked. If you have any bits of ham or bacon you would like to use up, use that toothen once it's cooked through and hot, grate the cheese and fold it through

Boil Potatoes and serve with grated cheese, salad of toms/beet/celery/carrot/lettuce and dress with reggae sauce. Could be a lunch or add tuna mayo or corned beef fritters for a dinner.
Pasta could be used with chopped toms, S onions & herbs and a squeeze of reggae sauce for extra taste.
Macaroni cheese (any pasta shape will do)
Rice could be made into savoury rice with onions, veg and a stock cube. Stir in the salmon or tuna to bulk out.
Beans, toms and rice with herbs and reggae sauce will make a veggie chilli con carne.
If you have eggs omelete with any amount of what you have: cheese & tom being main ingredients.
Celery/carrots/turnips are good stew or slow cooker ingredients - probably a good soup in there if they are going soft.0 -
Corn Beef hash!
Fry up the spring onions.
Half or quarter the potatoes {no need to peel}.
Slice the carrots. I like to Brown the carrots and potatoes off with the onions.
Transfer into slow cooker, with just enough stock {beef} to cover and season with salt and pepper, I also like to add some brown sauce.
Add the tin of baked beans and corned beef and cook until the corn beef has broken down and the potatoes and carrots are tender.
You could use the cheese on top.0
