    Could you make a creamy fish pie and blend it into the sauce?

    I don't like the taste or texture but my Mum likes it lightly floured and fried and then served on toast.



    I ended up putting crumble on top of the puddings so turned the filo bits into a sort of baklava with the tail end of a pack of chopped nuts. It was very nice with a cup of tea this morning. There is crumble mix left over which can go over something puddingy today. Not sure what yet. If all else fails it will freeze.

    The salmon was packaged up and put back in the freezer. Labelled!!! :)

    Thanks dormouse. Fish pie is on my menu plan for this week so will try it. Remember having herring roes on toast as a kid so might try that too.

    Had also wondered about "smoking" it - don't have a smoker but I'm sure I remember seeing some lind of smoking bags in LL catalogue that you could put in the oven - don't seem to have them now though - and didn't turn up anything on internet trawl either. So looks like it's fish pie or on toast then!

    Sounds as if you've had a very busy and creative time turning all your leftovers into lovely meals - I am trying to do the same and hope to beat my grocery challenge by doing it too.

  • I'm going to have to be very careful. MIL is home for a few days and promptly went shopping and stocked up on salad stuff, soft cheese and avocados. The fridge is now stuffed full with the kind of highly perishable items that I've always ended up throwing away. She's off again tomorrow so I'm going to have to plan a number of salad meals to make sure it doesn't get wasted.

    I'm pleased with myself so far. Bag of potatoes and a small ready cooked chicken became a roast dinner for all five of us. The leftover mash and chicken is now a cottage pie for Wednesday when I'm out all day. Half of the rest of the potatoes were cut up and cooked with carrot, onion and celery and the last of the ham and some bits of chicken were added and it's going to become pasties tonight. Served with lots of salad! :)

    The carcass was boiled up with all the veg scraps from the week to make stock. This became the base of a tomato and veg soup which used up various odds and ends of veg from the fridge and freezer. The kids asked what meat was in it so I told them chicken, which was technically true as there was chicken stock. No actual meat though but with the chickpeas and pasta I don't think they noticed. The last of the potatoes, some onion and rosemary topped home made focaccia to eat with it last night. Kind of carb overload but no one complained and all came back for more.

    I had a go the other day at using the cores and peels of the apples I was stewing to make jelly. I made a pot of mint jelly and a pot of chilli and lime jelly. I overcooked the mint jelly, didn't realise it would set so quickly and so hard, but it's edible enough. I was more careful with the chilli jelly though and it is perfect. It's a very pale pink colour and looks quite pretty.

    Kebabs - get some pitta bread and salad - reheat lamb, steaming works best, stuff all in and enjoy.
    Mama read so much about the dangers of drinking alcohol and eating chocolate that she immediately gave up reading.
  • Kebabs sound wonderful, so that gets my vote.

    If not then Shepherd's Pie is always classic or maybe a curry?

    Another nice way to use it up is to crisp the outside up in a hot oven or frying pan and then shred and eat like crispy duck, wrapped in chinese pancakes with plum sauce or similar. My kids, who don't really like lamb, love it like this.

    We too have quite a lot of last year's Runner & French beans in the freezer. As we currently have surplus tomatoes, I'm going to use them up by frying tomatoes, onions & garlic, and throwing the beans in to make a ratatouille. This makes a cheap meal with crusty bread, and you can always serve with a couple of rashers of bacon if you want some meat content.
  • I have just tried a recipe in this months sainsburgs magazine - the marscapone cheesecakes (with raspberries rather than blueberries).

    They are delicious, but am annoyed that the recipe calls for 150g marscapone, and the sainsburys tub size is 250g. So I have 100g left over. Why cant Sainsburgs use a recipe that used the whole tub rather than encourage waste.?

    Any ideas for the marscapone?

    But frugally - just had cup a soup for lunch that has been in the cupboard for a year or so, and made my first batch of Twinks hobnobs - yum!!

    In the magazine, there is a recipe for peanut butter icecream...will try that tomorrow:p (dh loves peanut butter, not me)

    Afternoon you lot. :p I hope everyone's having a lovely day?

    I was wondering if you'd be kind enough to invent my dinner today please? :D

    I have 13 small new potatoes that need using up.
    One onion, medium sized.
    Lots of fresh tomatoes - 5 varieties, everything from plum to salad to cherry.
    Some smoked Red Leicester cheese that's way past its sell by date but was reduced to 19p so I couldn't not buy it, could I? ;)
    Various veg I can grab from the garden - beetroot, runner beans, elderly spring onions (yes, I know, it's autumn :o ), celery, carrots, & turnips.

    I've got tinned salmon, tuna, beans & corned beef, plus pasta, rice, kidney beans, herbs, spices & whatnot. I've got some Reggae Reggae sauce that's drawing a pension too. :rotfl:

    I'm sure there's a really tasty meal there, but I don't know what it is - yet! Suggestions (with bloke-style instructions!) would be very much appreciated. There will be extra points awarded for anyone who can use up the potatoes, cheese and elderly spring onions. :money:

    I might make it tomorrow or Thursday if it looks tricky. :o
