Thanks kippers and pretz for the rhubarb jam recipes, I've got some rhubarb in the freezer, some on the side in the kitchen............and then a friend came round and gave me a load more  , so I will be making rhubarb jam tomorrow, can't wait, hope it's lush!! I'm actually enjoying this challenge, I thought I was good at not throwing food away, but it has shown me I can be even more careful, when I read about how many whole chickens are thrown away in the UK in ONE DAY I was shocked, that is pretty shameful. Did I say I was in on the challenge too? :D

Left over apples.... lovely smashed apple.

Cut up the apples into chunks, you can peel and core them if you want.
    Put into large microwave-safe bowl.
Add tablespoon of water per apple/ or beer..or cider... or white wine..hence smashed apple:beer:
Blast way. (About 5 minutes is usual).
    Cool slightly.
Puree through a sieve. Sweeten to taste.
    (Core, peel gets left behind!)
Put into washed out yogurt pots.
Will keep for up to 10 days in the fridge or can be frozen.
Also ideal for lunch boxes ( in a pot with a lid, plus spoon.
Counts as 1 of your 5 a day.
Can be used with slightly bashed/tired fruit

    Oh it is so yummy.

I did cheat though and did it in the bread maker because that way I could forget about it and get on with the other things I was baking :)

I didn't know you could make jam in it. I'm probably being dense but how??

In the link that pretz provided the rhubarb jam, and the freezer rhubarb jam, the recipe asks for "jello"(one sachet). I have got sugar free jelly sachets in my cupboard, do you think they mean this type of jelly? I've got orange flavoured or blackcurrant, do you think they would be a good mix of flavours if I used one of these? Or maybe not!!

PS, I'm also making the smashed apples tomorrow, I have 5 bruised apples in my fruit bowl (from Asda!) was wondering what to do with them!

    Hi

I had to throw out a really manky pear lurking at the bottom of the fruit bowl today. I picked it up at my thumb went straight through it:o . There are another 4 or 5 looking past their best but not as bad as that one. Does any one have any ideas on what i can use them for?

Thank you for your ideas they both sound good.
  • I made a lovely chocolate cake for tea tonight, unfortunately the double cream I bought to go with it (use by 11th May) smelled a bit like cheese. OH had some with his cake but the rest had to go in the bin.

    FFM :)
