    olliebeak im never one to ugnore a request so went on the hunt for an easy rhubarb jam recipe and came across this one http://www.rhubarbinfo.com/recipe-jam.html#index_jam_5
    however i cant tell you what it will turn out like as i have never made it but im sure someone will be along to give you a tried and tested recipe :D

    Rhubarb jam:

    Use the same weight of sugar as rhubarb. I peeled and chopped up rhubarb and covered it with the sugar over night (this draws the water out)

    Tip the whole lot in a heavybased pan and gently bring to the boil (i found the rhubarb was nice and soft by the time it boiled). I then added a teaspoon of lemon juice.

    Boil vigorously for ten minutes stirring and then check for the setting point (ie put a teaspoon of jam on a plate that has been in the freezer for some time, if it wringles when you push with your finger then its ready) if its not then re-boil for a further 5 mins until the setting point is reached.

    Leave to settle for 15 mins then pour into warmed sterilised jars and seal.

    We throw away a lot of food in our house. Mainly because my OH is convinced that as midnight strikes, food goes off lol. He won't eat bread with a single speck of green on, even if I just tell him to take it off.
    Little does he know that most the bread I use for his sandwiches have been 'de-fuzzed' haha.

    If meat nears it's sell by date and we aren't going to use it, I usually just cook it and then we have it on sandwiches. I usually cook too much food for our evening meals, but this is ok as DD has it for lunch the next day.

    Question - can you freeze baked beans? Or do they go mussy? I'm sick of opening the fridge to yet another fuzz filled tin of something unknown!

    Oh and eggs Lolah - I'd bake some cakes, that's a few gone. Omlettes for dinner? You could boil some for lunches for the next couple of days too. Unlike my OH - we know things do not go off at midnight lol
    Hi, yes you can freeze baked beans. They freeze fine.
    I have been wracking my brain, thinking what to do with stale ish Jam doughnuts, OH keeps buying a bag of them, then after eating 4 of them, not at once though, there allways seem to be a couple left over that have gone dry usually the next day. Anyway when i got home from work the other day, OH had made a " bread & butter type pudding with the left over doughnuts, we had that with some cream and it was really lovely. He said that he made it just as you would make a proper bread and pudding, milk, sultana's and just substituted the bread with the doughnuts. It worked really well. No more throwing away stale Jam doughnuts now for us.

    I think I could do with joining this challenge. I can be a a bit scatty about forgetting things in my fridge but have been making a real effort to freeze where possible.

    HelenYorkshire - What abut pineapple upside down cake? usually see tins of used in the recipe but sure it'd be nice with fresh. You could freeze it in slices/chunks until you want to use it.

    demented, I've always frozen left over doughnuts (usually seperate in bags so they don't stick together) so next time your partner has them, you could freeze them to make b&b pudding with another day or just for eating

    demented - i know where your coming from with the doughnuts my husband does excatly the same so we usually have them warmed up in the microwave with custard very yummy

    Can I join please?

    Tonight OH wanted to chuck stuff from Thursday's bbq, but I have made it all into thick soup including the leftover lettuce ....adding a wilting leek and half an aubergine ( other half was a bit furry :eek: )... and it tastes really nice :confused::p

    Plus have juiced an ancient bag of frozen oranges.

    Next week's challenge is to defrost random items of meat in the freezer which have no labels and construct a meal once they are thawed and hopefully recognisable!

    That's a good challenge Wyebird! I think I need to do an up to date freezer inventory, in order to plan things a bit better.
