    A Sunday suggestion if you're doing a dinner tomorrow, one of my favourite left over meals is yorkshire wraps - if you have left over batter from yorkshire pudds, heat a large oven tray and put a thin layer in to make an almost flat yorkshire pudding, they usually cook in about 12-15 mins so keep an eye on them, they store well in the fridge until the next day and can be reheated, fill with meat and spread with gravy then roll like a tortilla. You can add veg or serve with veg to make a larger meal, lovely :D

    Good morning all...day four of the challenge...aren't we all doing well!

    This thread is turning out to be so useful isn't it. I have learnt so much already! Thanks all.

    Today i need to use up 3 packs of ham so it's ham on toast with cheese for breakfast, ham salad for dinner and ham cobs for tea!

    Does anyone know any good recipes for spinach as i have loads at my allotment?

    By the way Denbo, i hope the rhubarb jam recipe i posted is a help to you.

    ok i have a few as absolutely love spinach

    1 is abit posh but nice to know for special occasions or if your budget allows it and the others are great pasta dishes my family love them.

    the posh one ill do it as a single serving then just multiply for each person

    1 chicken breast (fresh or defrosted)
    2 cherry tomatoes (sliced)
    handful of spinach
    2 rashers of bacon (i like streaky but works well with normal bacon or pancetta)

    1 cut half way into the chicken breast to create a flap
    2 place spinach and sliced cherry tomatos inside the flap
    3 wrap with the bacon then place in the oven on about 200 for 15-20 minutes until the bacon is crisp and the juices run clear from the chicken

    now for the pasta dishes

    this is really easy
    again adjust for your own servings

    1 handful of tagelitelle
    1 garlic clove
    1/2 tin of chopped tomatoes
    good handful of spinach

    1 cook pasta
    2 whilst pasta is cooking chop or crush garlic and fry them till golden then add tomatoes and simmer gently
    3 when pasta is cooked drain but leave alittle bit of water on the pasta as this naturally thickens the tomato sauce
    4 add pasta and spinach to the tomatoes stir in the serve

    the third is a little more time consuming
    this is a recipe i found ages ago and feeds 4

    350g penne pasta
    300g spinach
    1 tbsp oil
    4 chicken thighs (deboned and skinless cut into strips u can also use breast)
    1 garlic clove (finely chopped)
    425m/3/4 pint semi skimmed milk
    25g plain flour
    25g butter
    140g mature cheddar (grated)
    grated nutmeg to taste (optional)

    1 cook pasta
    2 whilst pasta is cooking, cook chicken and garlic once cooked set aside
    3 add milk to a pan, sprinkle in the flour, then add the butter and whisk over medium heat
    4 once sauce has thickened and is smooth then stir in 85g of the cheese, nutmeg and season to taste
    5 place all cooked ingrediants in a baking tray then add the spinach mix together well
    6 then add remaining cheese on top place in the oven at 200 and cook till golden usually 15 minutes

    Anyone know of a couple of sauces that would be easy to make and freeze to go with tuna. I have some tuna steaks in the freezer I need to use up this week and would like to make the sauces ready so I can just defrost and cook in the week.

    Well I am sat here eating a home made scone and Rhubarb Jam - sooo yummy !!!

    Some milk I had in the fridge was starting to turn so have made scones to use that up so I don't have to throw it :) Usually I would have chucked it but read somewhere that sour/slightly sour milk makes nicer scones also read Kippers recipe for Rhubarb Jam and as I had collected a load from my mums last night I decided why not :)

    Also have duck in the oven roasting and I have used the juice and pulp from an orange that was on its way out to go over the duck !!!

    So far no waste yet !!!

    thanks for the suggestion, unfortunately too late for last Sunday's batter mix - which was one of the things thrown out yesterday - it had gone rather smelly :rotfl:

    Food wasted Saturday: 1/2 of last Sunday's batter mix + 1/2 beaten egg (other half was used to glaze some rolls)

    Oh it is so yummy.

    I did cheat though and did it in the bread maker because that way I could forget about it and get on with the other things I was baking :) DD1 is so fussy with her jam but she has tried it and loves ot too. :j :j

    Have a Battenberg Cake in the oven at the moment - never tried to do one before but need to use up some marzipan I have in the cupboard and DH loves Battenberg :)

    Also going to be doing a coconut tart for pudding because I have about 3 half opened/used bags of coconut to use up :o I always open a new bag and never finish off the other stuff - so naughty and I need to change that bad habit !!!
