    I usually make cottage pie with left over beef - just substitute beef for mince and only cook for 10mins instead of 40 before topping with mash and putting in oven HTH

    Just had a whoopsied beef joint from sainsburys for sunday dinner. I have quite a large piece left for tomorrow but not sure what to do with it? Any suggestions? Can it be stewed/put in slow cooker after it has already been roasted?

    I usually buy a larger joint because I like to mince the left over beef for cottage pie. But when I was without my mincer I discovered that if you slice the beef very thinly into small ribbons then combine that with gravy &/or veg, top with mash, it makes a lovely pie.
  • I got some inspiration from the 'plate pie' thread and will make a meat and potato plate pie for tonight with my left over beef. Going to put some peas on to soak. Pie'n'peas yummy!

    I've got leftover roasted veg from yesterday's dinner, so I'm going to make a roast veg lasagne for later on in the week. The leftover chicken is going to become a chicken and leek pie and I boiled up the carcass for stock and made chicken and rice soup that will do us for lunches at work :)

    I cube it up , add all the left over veg / roast potatoes / gravy and an onion , sliced peppers , garlic more gravy if needed and top with mash potato

    love this thread!:T i had a big pork shoulder joint yesterday as i had company but wasn't sure what to do with the leftover meat :o as i don't have pork much but i love the idea of the sweet and sour pork and a stir fry etc so i have divided up the meat into portions ( i have found that a butter tub is big enough for a portion of meat for 4 people) to do interesting things with throughout the month!!

    i made my big christmas turkey do a good few dinners and soups in January so this might be a good strategy for the month get a big roast going at the beginning of the month and divvy up the left overs...rubber roast :D

  • ive been very good this week (well last wk) i made a lamb hot pot and at the end there was some lamb and gravy left so i minced it and me and kids had a little shepards pie with beans the next day. then we had cottage pie and what was left was turned into mini pies for lunch the next day. yesterday was roast chicken, today is chicken soup made from remains of chic.
    One day I will live in a cabin in the woods

    Can you freeze the portions?
  • Hi Kerik - I did the same thing as Evie with our turkey. I either freeze the meat in some of the gravy when I put it in the tubs or just slice it up

    Our left over squash stew from this evening has been mashed up to make a lovely thick soup for lunch tomorrow - spicy and warming.

    Brilliant - will freeze the rest then. i tried baking some in the bottom of the oven in the leftover gravy, but found I hated the taste - very school dinnerish and not in a nice way!
