    made a beef casserole today and this time slung in 1/3 tin of tomatoes and a child sized portion of HM leek and potato soupand it was lovely, although didnt get the compliments last weeks beef casserole with jar of baby food got! lol :rotfl:

    Hello everyone!! Im in need of a little help....

    Ive got two bags of mixed nuts and really need a recipe to use them up. there just plain nuts, any ideas would be greatfully recieved!!!

    Also, just found a recipe for Austrian Chicken in my very old cookbook, and it calls for breadcrumbs mixed with ground up nuts and paprika as the coating for the chicken - sounds delish...

    just had my second leftover dinner out of a haggis and shop bought carrot and swede mash.. I think that's quite good value - to get 3 meals out of it. Looking forward to something else for dinner tomorrow tho lol

  • Made a rather nice "cowboy" shepherd's pie last night - well that's what I told the kids it was. I had a load of mash left from Monday. Base was 2 rashers of middle bacon, chopped and fried with an onion and a rather ancient leek. I then added 1 slice of ham, chopped and 2 frankfurters, sliced, some stock, tomato puree and Worcestershire sauce and Tabasco. Simmered for 10 mins and then topped with the l/o potato and some grated cheese. Baked for 30 mins and served with some rescued carrots from the bottom of the fridge. It was surprisingly tasty and not only did I use the spuds - I tidied up the fridge as well!!

    Edited to say - I added some l/o peas to the base as well

    This sounds delicious, though I'm not a fan of frankfurters (just can't 'do' smoked flavours).

    It's given me some inspiration for feeding the dgk's :T. I've got some mini-sausages in the freezer from Christmas - they can be grilled/fried and cut into halves. Mix with a tin of baked beans, some l/o ham, or bacon and then top with mashed potato (maybe with a little grated onion in it for adults) - or even bubble and squeak - with some grated cheese on top before grilling.

    These "cowboy" type dishes are ideal for using leftovers, and baked beans and sweet corn are ideal healthy high fibre contents. A large spoonful stuffing mix stirred into the mashed potato will also add some extra flavour if necessary. We wrap frankfurters individually in cling film before freezing in a bag. It means that as well as chopping up just one or two in a rechauffe-type meal, you can just add one to an instant "cup of soup" meal heated in a microwave, to bulk it up if you don't have time to go the home-made soup route.
  • Used up some Hot salsa dip from xmas, yesterday and today...
    OH wanted spicy chicken sarnies for work, so we thought we'd try the hot salsa dip. I strained off the 'juice' through a sieve and put the lumpy bits in his sandwhiches like relish. I was reheating a casserole for dinner, and HE suggested putting the salsa juice in there! It was quite hot, but not too bad! Got one more lot of salsa bits to put in his sarnies, then it will be all used up.
    So glad OH is getting into the spirit of things!!! :)

    Good grief - I had to go potholing to find this thread it had sunk so far down the board!!

    Had rabbit stew from the SC last night for tea - rather than just piling the "little bit too much that I'd cooked" into the bowls last night I set it aside and it will make my lunch today, probably with some bread.

    Chopped mixed nuts - maybe add them to the ingredients for a granola style breakfast cereal? I'm planning on making a batch this morning and will be adding some assorted nuts that I know are in the cupboard begging to be used. The recipe I will be adapting from is tesco one and goes something like this:
    250g porridge oats, 3tbsp sunflower oil, (you can also use groundnut or walnut oil), 4tbsp runny honey (or use set honey and warm it through in a small pan with the oil), then a mixture of nuts and seeds - you want about 10tbsps altogether for the amount of oats etc shown here. They suggest flaked almonds, pumpkins seeds, sunflower seeds and sesame seeds but I usually use linseeds, chopped brazil nuts and chopped cashews as well. Pre-heat the oven to 150c/gas 2. Put the dry ingredients into a bowl. Mix together the honey and oil and add to the seed/oat mix. Mix them together well and smooth out onto a god non-stick or well greased baking tray. Don't worry if it's a bit clumpy - this justs adds to the flavours when you eat it. Bake for 15 minutes, checking occasionally to be sure the edges aren't burning and stirring around once in the middle of cooking to turn everything over. If it looks like it needs more time give it longer - keep checking it each 5 minutes though and don;t let it burn. Leave to cool, then stir through the dried fruit. Pop it into an airtight box and it'll last a while. Well, actually it won't, you'll not be able to leave it alone!

    What a coincidence ;) We're having leftover rabbit stew for supper tonight. I made it a couple of weeks ago and there were two joint left plus some gravy/sauce. I froze it thinking it'd do for OH and me one evening.

    Today I've decided to turn it into a pasta sauce (I was reminded of a hare ragu I had at a pub). I'm going to take the meat off the bones, chop it and any veg in the sauce and add some passata. We'll have it with tagliatelle.

    I think I'll make some granola too as I have a few nuts to use up -thanks Essexhebridean.
  • I've got some bolognese in the fridge, but not a whole portion. I'm going to add a tin of beans to it and top with mash and have a tomatoey shepherd's pie type thing!
