    Hmmm - the leftovers from last night's chicken curry are going to be mixed with mayo and chopped onion and made into sandwiches for tomorrow's packed lunch.

    Any ideas for 2 VERY ripe mangos which were purchased silly cheap from Lidls on Christmas eve........
    Please forgive me if my comments seem abrupt or my questions have obvious answers, I have a mental health condition which affects my ability to see things as others might.

    Blitz them in a blender with some yogurt and milk/ soya milk to make a yummy smoothie- I'd chuck in a banana too if you have one.

    Mango crumble
    in ovenproof dish put
    2 chopped or sliced mangos & 125 g frozen berries plus spice if wanted
    top with
    100g breadcrumbs & oats, mixed. Plus 50g sugar & handful flaked almonds if liked
    bake 30 mins gas6 or 180C fan oven (serves 4)

    I have just made a soup/stew using leftovers which has gone down very well.
    I had a collection of rejected ends of veg which I froze over a few weeks - leeks, carrots, cauliflower and celery I think. I sauted them in a spot of butter, the last of a bottle of olive oil and about a dessertspoonful of sunflower oil, added a litre of water, a vegetable stock cube, 1 tsp mild curry powder and the remains of a bag of red lentils - about 6 ounces at a guess. I cooked it for 20 minutes till the lentils were mush, then blended it, added a handful of sultanas and cooked for a few more minutes.
    It's ever so nice!
    Sadly I have to admit I have added some greengages to the compost - they had been at the bottom of the freezer for some years waiting for me to admit that I had merely washed them and some were bruised and going bad - now they're frozen I can't see which are good and which are horrible.
    Two lots of four-year-old leek & potato soup are going too. It didn't taste right when I made it and it won't be any better for being four years old :eek:

    I rarely have any left overs myself as I live alone and only make what I need,
    but I love doing a rescue raid on my sons fridge. Today my haul was half a
    french stick, two wrinkled tomatos. i sprouting onion. Great French bread pizza for me. Half a pack of soft digestives, makes a base for cheesecake
    and six Christmas Satsumas have juiced them up Also found two half cans of flat Coke so used them to clean the loo for him Oh and three stale fairy cakes
    frozen them until I make a trifle. Sadly decided a lump of dried up mouldy cheese just had to be binned.

    Considered this a very successful rescue mission.

    I was also going to suggest blitzing the mango flesh into purree. . If you don't want to use it immediately freeze it in an ice cube tray or other small container. Delicious blitzed up with yoghurt and oats as a healthy smoothie, or stirred into porridge to sweeten it up.

    :rotfl:I made a beef hotpot with leftovers from weekend joint, put a sad carrot,leek and parsnip then found a jar of baby food in the cupboard (ds stopped eating this over a year ago!) so threw that in to bulk it out just adjusted the seasoning!! Oh said it was lovely , I kept the secret ingediant secret through!
