Any ideas for left over Watercress, Spinach & Rocket on its way out?
    Soup ;)

Fry some onion in butter or oil, add some diced potato. Cook for a tew mins. Add leaves then some stock or stock plus milk -a splash of white wine or vermouth is nice too.

Simmer till potato is soft then blend. A littl cream is a nice addition if you have any.

Fatman - probably too late for this batch of leaves, but you can often revive a packet of mixed leaves by soaking in a bowl of cold water for a couple of hours. The same applies to those wilting Little Gem & other lettuces. Just scrape the tiniest sliver of root of the end of the browning base until white flesh appears and then soak in cold water.

Just used up a tub of chicken stock that has been in the fridge for a few days plus about 4 servingsworth of broccoli and cauliflower cheese to amke a delicious soup.

I fried a shallot plus some bacon that needed using up first, then added the broc-cauli-cheese and stock, blended and voila!
  • Today I had left over mashed potatoes from last night dinners, quickly sliced up an onion, shredded the two poussin legs husband didn't eat, and had a meaty oniony bubble and sqeak!

Potato peelings can be scrubbed and any unwanted bits removed...then paint sparingly with olive oil or any oil you prefer, flavoured or otherwise.

Bake in a hot oven for about 15 to 20 minutes, or until they go very crispy.

healthy crisp snacks, great with dips and you can sprinkle with a little parmesan or other hard cheese for the last few minutes of cooking.:)

I know you won't judge me so... I had an awesome leftover concoction for tea! A friend came over yesterday and had a takeaway, I snaffled the leftover sauce from the thai dish in the fridge! I found some scallops (ooo fancy) on whoopsie and added the veg leftover from yesterdays dinner and a couple of mushrooms and I had a fantastic thai dish for dinner. Sauce was amaingly hot and full of aromatic flavourings! Nom nom nom!

    Hello everyone,

Is it ok to refreeze these chicken thigh bones and skin that I cooked after defrosting? I want to include them in the next round of chicken stock making when I get a carcass again rather than throw them away.

Many thanks in advance for all your great advice! :T

  • Yeah, as long as they've been cooked it's okay to refreeze.

  • Just a note to say a friend recommended haggis sandwiches for leftovers. We are trying them tomorrow.

I suppose it's just like pate, really

    Night all x
