    I have some roast duck leftovers, enough for a meal for two. Any ideas how I can use it please?

    I've got left over rabbit and bit of chicken and bacon roast joint, lots of stock, apple sauce. Does anyone have any ideas to help?

    Would any go together in a pie? But how would I make it a bit juicy?

    Really don't want to throw anything away as this ismy worst habit from the past!

    I've got left over rabbit and bit of chicken and bacon roast joint, lots of stock, apple sauce. Does anyone have any ideas to help?

    Would any go together in a pie? But how would I make it a bit juicy?

    A bit late now but swede is really nice when flung whole into a microwave and blasted on high for about 15-20 mins, then the peel falls off and the swede is sweet and soft and just gorgeous!

    Roast duck leftovers - how about heat it through with a spoon or two of chinese 5 spice and some spring onions/normal onions and serve in thin pancake rolls?
    Trying very hard to be frugal and OS - just plodding on and doing my best!

    Thanks but this is what the rabbit is left over from! I wasn't very keen on it.

    Think I might strip the meat from the legs, mix in the chicken, mix with cooked pasta and a sauce and top with cheese and bake in the oven until heated through

    That's about all i can manage as I am struggling to type due to whiplash from yesterday!

  • Last night I used up leftover pannettone from Xmas, I made it into bread and butter pudding, it is quite highly flavoured so I didn't add any extra dried fruit and I hate it when the raisins get burned on top anyway. It had loads of citrus peel in so I made a marmalade sauce (sauce made with cornflour and milk that I added a load of MILs marmalade to and a glug of cointreau at the end as I was feeling decadent) to go with it and it was really scrum. Not bad for a Monday night so it will be downhill from here on in no doubt. Tonight it is cottage pie to use up the rest of last nights mince and tatties. Have just sliced last night's tatties over the top so will stick a bit of cheese on to glue it all together LOL. Then I think it is rubber chicken for the rest of the week LOL. I keep saying I am going to join the grocery challenge but I am too embarrassed to put my spend up at the moment for the three of us. Maybe next month.

    Just wanted to let you all know it was yummy!

    I stripped the left over meat from the rabbit bones, mixed it with a bit of leftover chicken, then mixed in a tub of defrosted tomato pasta sauce. Cooked some pasta and layered some leftover HM parsley sauce over the top and sprinkled cheese over and baked in the oven for 25mins.

    Prior to this thread I would have thrown the chicken, rabbit and parsley sauce away. And it made a yummy meal - the only problem is it made loads and I have more leftovers!

    Had leftover mash and butterbeans from Sunday's evening meal plus 5 very sorry looking spring onions.

    FOR LUNCH: The butterbeans were 'sweated' with a chopped onion, handful of lentils and 1lb carrots till softened a bit and onion had gone translucent. Covered with boiling water added a veg oxo cube, some celery salt, dried mixed herbs and ground coriander (no fresh left!), brought to the boil and simmered until the carrots were properly cooked. Allowed to cool down and then 'whizzied'. Gorgeous carrot, butterbean and lentil soup. Served with crusty bread. OH was on the mooch for second servings - but I beat him to it and got the leftovers into the freezer BEFORE he had chance to even think about it!!!!!

    FOR EVENING MEAL: Chopped and sweated the spring onions. Drained a tin of tuna in brine (SmartPrice of course ;)), added to the mash and seasoned with black pepper. Then added the spring onions and gave it all a really good mix. Formed into fish cakes - made 4 HUGE ones which we have had with crusty bread and HP sauce (little sachets that I picked up from a cafe on holiday last September :o)

    Feeling very pleased with myself this evening :D.
