I Sky Plussed that recipe when it was on tv. Could you not use the left over stuff as lemon curd ?

Ooh, I'm not sure. What's lemon curd?:o

I've put it in the fridge for now. Might see if I have a muffin tray or something and use the pastry I have and tip the leftover filling into it and then see how much I have left over after that.

    Thanks guys.

You use it like jam. Here is a post from a few days ago with the recipe. You have most of the stages of the recipe.

That's what I was going to suggest ;) I'll add this to the recent thread on using up leftovers, to keep suggestions together :D

    Hi all,

I made a bit of a random dinner out of leftovers and bits tonight and it came out really nice so I thought i'd share it with you:

    Ingredients:
    Olive Oil
    2 rashers bacon, chopped
    1 squirt garlic puree
    Leftover Roast chicken
    Leftover cooked broccoli
    sml glass white wine
    double cream
    Pasta (any shape)

First i put the pasta on to boil. I put a drizzle of olive oil in a pan and fried of the bacon until brown, then i added garlic puree, roast chicken and broccoli, and fried it off for a couple of minutes to cook the garlic and heat through the chicken/broccoli. then added the white wine and boiled off the alcohol and added the cream until it looked like a sauce and putted the drained pasta into the sauce.

It was lovely with a good grind of black pepper over it, it tasted like something from a fancy italian restaurant and it was just from bits i had knocking around in the fridge after the weekend!:D
Hope you all enjoy it too!

p.s. sorry there's not exact measurements and timings but I just kind of threw things in!

    Hi,
Normally more of a lurker - thought i would actually share with you what I did with some leftover brisket and hope other people will share their leftover recipes as well. ;)
    Savoury mince and dumplings
I minced the beef in the food processor. Fried some finely chopped onion and garlic for a few minutes then added finely chopped carrot and celery (done in the processor as I had it out!). When these where soft I added the minced brisket. To this I added a good squirt of tomato puree and a splash of worcestershire sauce. Mixed thouroughly. Added a heaped desert spoon of flour, mixed again, then stirred in hot stock made with a stock cube until I got a nice mince and gravy consistency. Added a handful of oats and a handful of red lentils (which I rinse before using). I topped up the stock during cooking as needed. Then I added a good splash of mushroom ketchup (magic secret ingredient for all stews and casseroles!) and a bay leaf. I also had a turnip and swede in the fridge (grown by my own fair hand!) so I whizzed these up in the processor and added these as well. Whilst this was going on I was also cooking some green split peas which I had soaked overnight and added these to the mince when cooked. This meant I simmered the mince for about 45 mins once everything was added.
I made the dumplings with 4oz SF flour, 2oz veg suet, pinch of salt, pinch of dried herbs and some warm water. Mixed together and made 8 dumplings which were added 20 mins before end of cooking to the mince and turned occasionally to make sure they were cooked.
This was a big hit with my family and although it may seem like a lot of work it really is a bung in one pot and cook recipe.
So does anyone else have any leftover recipes, would be really interested to know what people do with leftover roast pork as I am always at a lost as to what to do with it!
