  • Yum, bubble and squeak with a fried or poached egg on top!!! Somewhere in this forum there were instructions for bubble and squeak and they were much better than mine would be. Hope this helps.

    I'd fry it up in the frying pan all chopped up and add some bacon, a fried egg or baked beans and lots of Worcester sauce.

    It is a really satisfying feeling using up bits and pieces like this. The other day we had sausage, root-mash and gravy. I ended up with leftover gravy and mash. Next day I made shepherd's pie adding the gravy to the mince and the mash to more mash for the topping.
  • Zapp it in a blender with some stock to make soup, or freeze it untill you've got enough saved up for a big bowl of soup.

    That's a good idea. I've read about (Tightwad Gazette I think) the 'freezer soup pot' -a plastic tub where you save all your leftover cooked veg until there's enough to make a big pot of freezer soup. You add some fresh ingredients and maybe beans, lentils, barley or some meat.

    I'd make it into soup for lunch as well. But then I looooooooove soup!
    Fluttering about an inch off the ground, I may fly properly one day and soar in the clouds!

    Another vote for Bubble and Squeak!! Yummy!! Heavy bottomed pan, oil, chuck it all in with some bacon and fry 'til crispy!!! Yum, may have to go make some now :)

  • I am implementing loads of new ideas from this forum to save money:T but I keep on kicking myself because I am not organising my leftovers properly. On Monday we had fish, new pots and cauliflower cheese. I was going to use the leftover cold new potatoes in a fritatta and serve up the cauliflower cheese again on Tuesday... I forgot:rolleyes: so they went in the bin. Yesterday I made a huge pot of chicken and vegetable soup which we ate and I put the rest in the fridge but I should have put it in the freezer as I'm sure it will be off by tomorrow so it will have to go in the bin:eek:. I'm making bigger portions with the intention of using the leftovers the next day in a different way or freezing but I seem to just be wasting more stuff. Any tips to stay organised with leftovers?:confused:

    There are two handy tips I can think of. Somebody on this board - I can't remember who it was or which thread, sorry! - suggested to keep one shelf in the fridge dedicated to leftovers. Then train yourself and housemates in acquiring the discipline to look on this shelf first before you are making your next lunch or dinner (or want a little snack during the day).

    The other one is, that when you serve up the food you have just cooked, put half or part into freezing containers already, making sure you have a portion worth while freezing. Bring the rest to the table. If there is still surplus, you can fill your freezing container even more, or else it goes on your 'leftovers shelf' in the fridge.

    The idea is that when it is already in the freezing container, it is almost certain to end up in the freezer. It is normally better that way than keeping it for next day, as next day you probably want something different rather than the same again!

  • Don't bin your soup!

    If you've had it in the fridge, then it should keep for at least 48 hours. Just make sure that you bring it to the boil when you reheat it. It's better to be piping hot and then cool down, rather than not heat it up enough!

    Once you've made your soup, let it cool down, decant it into your freezer containers and put it in the freezer. Likewise for anything else that you're cooking in bulk. Keep a hold of plastic containers that you buy soup etc in (I've got loads from when I've bought soup that's RTC or on offer)
