  • Another idea to remind you would to have a menu pinned or stuck on to memo board or the fridge with magnet. Then you could remind yourself whats for tea/supper.:D

    I am implementing loads of new ideas from this forum to save money:T but I keep on kicking myself because I am not organising my leftovers properly. On Monday we had fish, new pots and cauliflower cheese. I was going to use the leftover cold new potatoes in a fritatta and serve up the cauliflower cheese again on Tuesday... I forgot:rolleyes: so they went in the bin. Yesterday I made a huge pot of chicken and vegetable soup which we ate and I put the rest in the fridge but I should have put it in the freezer as I'm sure it will be off by tomorrow so it will have to go in the bin:eek:. I'm making bigger portions with the intention of using the leftovers the next day in a different way or freezing but I seem to just be wasting more stuff. Any tips to stay organised with leftovers?:confused:

    Could you post yourself a reminder somewhere obvious in the kitchen that you have leftovers to use up rather than forgetting about them and binning them?

    There's a current thread with lots of suggestions for using leftovers that may help so I've added your thread to it to keep the ideas together.

    My OH, who's the experimental cook in this house, has just whizzed up an avocado (which was about to go soft) in the blender with leftovers of a smoked trout fillet, some Philadelphia cream cheese and the scrapings of a pot of creme fraiche. It has made a delicious smoked mousse which will make a small starter for a couple of days.

    Using beetroot leaves in soups and as substitute spinach in a pasta a cheese sauce bake.
  • I thought it might be nice to have a thread that has loads of ideas how to use up leftovers..... here are my ideas....

    Save leftover crusts of bread, slices of bread etc and allow to go stale (let the air get to it overnight) then grate it or whizz in a food processor to make breadcrumbs and transfer to an airtight container... these can be used for topping a macaroni cheese/cauliflower cheese/ingredient in meatballs/meatloaf....

    Leftover rice..... save in the fridge and make a rice salad for lunch the next day.... add tuna, chopped onion, peppers, grated carrot and a dressing of sesame oil, soy sauce and honey....yum yum :D

    Leftover mashed potato.... add a tin of salmon/tuna, spring onion, salt and pepper coat in breadcrumbs or seasoned flour and fry to make fishcakes. Or add 1/3 flour, salt and pepper and a beaten egg and form into patties and either fry or bake for HM potato scones.

    Leftover veg....into a soup.

    Leftover new potatoes.... make a frittata. Fry chopped onion, pepper, courgette, whisk 4 eggs with a little salt and pepper, add to pan, place sliced new potatoes over, fry slowly until set then slide onto a plate cooked side down, place frying pan over the plate and turn quickly to cook other side.

    Leftover meat of any description.... make a special fried rice.

    What a great thread!

    I always freeze any last slices of bread that haven't been eaten & when there's enough I defrost, whizz into bread crumbs & make a treacle tart. Very easy - Put pastry on a greased pie plate, melt golden syrup & mix breadcrumbs with it & a splash of lemon juice to cut through the sweetness then put on top of the pastry. Cut some long strips of pastry from the scraps and twist then lay over the tart. Get creative & make patterns :D I usually roll a strip up to make a rose for the centre. Yummy with custard & fab cold the next day if it lasts that long :rotfl:
  • I whizz up any stale bread & add any manky bits of cheese to it & use it to top Shepherds pie, fish pie etc. If I have lots of bread I make bread pudding, or bread & butter pudding.
    Leftover mash, I add cooked chopped bacon, onion seasoning & make bacon patties.
    Leftover meat, put it in the food processor with breadcrumbs, onion, carrot, seasonings & egg, shape into patties or balls, to make rissoles.

    My favourite os making stocks and soups from bones and vegetables [ast their best :j
