Maybe you lovely people can give me some advise. I have 1/2 jar of red Pesto left, and I don't know what to do with it.
Any ideas really appriciated.

ok pesto ideas...
add a big spoonful to bolognaise/chilli/shepherds pie (you get the idea)
mix in with tomato pizza topping
make a soup by whizzing up cooked peas, pesto and water
use it liven up sandwiches - you could mix a little with mayo, or just spread it on the bread.
stirred into pasta or noodles for a quick lunchweaving through the chaos...0 -
Hi Egon,
Apart from the obvious "stir it through hot pasta" I guess you mean.....
If you're bored with just pasta & pesto (I love it with loads of grated cheese on top - yum!), you can add it to a tin of chopped tomatoes for another good pasta sauce - also good with jacket spuds.
Mix it with some butter and use like garlic butter in a baguette to make a really nice 'pesto baguette'.
Spread it on a pizza base before you add the tomato/rest of the topping.
I've added the 'ends' of pesto sauce jars to bolognaise type sauces too.
A friend uses it mixed with yoghurt as a dip, but I'm not so keen - guess it depends on taste.
If you are not going to use it before it's date then bag or box it and freeze - it freezes pretty well.

Can sombody tell me what red pesto is made of? We make our own pesto from both basil and parsley, and as I'm about to pick a huge crop of ripening red peppers, wonder whether a pepper pesto can be made in the same way/ Any recipes please?0

Hey everyone!
I need some advice on what to do with some fruit thats on its last legs - really don't want to have to waste it :-(
4 pears (slightly bitter tasting skin so not great for eating as they are)
9 or 10 small plums (soft, but in a mushy way rather than a juicy way - if that makes any sense!!)
2 limes and 1 lemon.
Any ideas would be most appreciated.

I have just made some compote with some pears.
Any fruit will do.
Cut fruit into chunks just to make cooking easier. Put into a microwave safe bowl. Add sugar to taste. Cover with plate. Microwave until fruit is soft.
If you have a blender blend until smooth. If you haven't doesn't matter.
Pour mixture into a sieve and stir the mixture through the sieve. Squash the mixture through the sieve until all you have left is skin pips etc.
The puree or compote is delicious with yogurt or just on its own.
It will also freeze.0 -
Thank you M.E. - that sounds perfect - guess i could have it on top of my porridge for brekkie! Do you know how long something like that will keep in a jar?

I think you could use them really crushed up as breadcrumbs for fish or chicken?0 -
What about crushing them and incorporating some into the topping for fruit crumble? If your dog thinks you're the best, don't seek a second opinion.;)0
