Anyone have a recipe for HM lemon curd please? I've tried searching the mega index but couldn't find anything on there.

I taste tested tesco finest Vs Tesco not so fine and there was a big difference. Well worth it to go for the finest.

LEMON CURD.Recipe
- 250g Castor or Loaf sugar
- 2 eggs.
- rind 3 lemons
- juice 2 large lemons
- 100g butter.
Add the well-beaten eggs and continue cooking until the mixture coats the back of a wooden spoon. Put into jars and seal down.OR THESE

LEMON CHEESE Recipe 1
¼ lb butter
½ lb sugar
2 eggs
Juice of 2 lemons
Put butter and sugar in a jar, then stand jar in pan of boiling water until melted; then add eggs and lemon juice; simmer until the mixture thickens.
Recipe from Parish Cookbook, Christ Church, Sowerby Bridge.

In the Old Style Recipe Collection, listed under "sweets and things" is a recipe for lemon curd by Glad which I can highly recommend as simple to make and delicious, and there's also one suitable for the microwave listed there.

Hi, I've made this microwave lemon curd - it takes no time at all and it's yummy...
75g butter, cut into pieces
3 med eggs
225g caster sugar
finely grated rind and juice of 2 lemons
Place butter in bowl and melt in microwave (50-60 secs)
Beat together sugar and eggs, strain through a sieve into the bowl with butter. Stir in lemon rind and juice.
Cook on high for 3.5-4 minutes whisking ever minute until the mixture thickens. Pour into warm sterilised jars and leave to cool. Makes about 450g of curd and will keep for 2 weeks in the fridge.It's better to beg forgiveness than ask permission.0 -
You can make lemon curd in the slow-cooker! - no stirring.
4 oz butter
4 lemons-juiced and rind grated
1 lb of sugar
4 eggs,beaten
Melt the butter in a pan,add lemon juice,rind and sugar.Take off heat and stir until sugar has dissolved.Cool.
Add eggs to the mixture and pour into a 2 pint basin.Cover with foil.
Put the basin in the slow-cooker and add boiling water to come half way up the sides of the basin.
Cook on low for 3-4 hours
Pot into warm,clean jars.Store in the fridge once cool and use up within 3 weeks.
Makes about 2 lb0 -

I tried to make some yesterday when i was deliatastic but i managed to burn the bottom of it! Was a complete disaster and a waste of time and money. Apart from the obvious thing i should have done which was turn the heat down does anyone have any tips for me?Going to get back in control of my finances the old school way!:cool:0

I made some last week and used a bowl over a pan of water. It took about 10 minutes to thicken. Was lovely and I used some of it in ice cream0
