  • juice and grated rind of 4 lemons
    1 lb caster sugar
    4 oz butter
    4 eggs

    Beat the eggs in a glass bowl. Add sugar, lemon rind and juice and butter, cut up. Place over a pan of boiling water and stir until it thickens and coats the back of the wooden spoon.
    Pour into sterile jars, seal, label and refridgerate.

    I have made her Lemon Curd Layer cake and made her lemon curd then, it is very yummy!

    Yes, I made some a couple of weeks ago using this recipe. It's really easy and absolutely delicious. I think Delia's recipe is far too sweet.

    Lemon Curd
    Makes about 2 jars

    juice and finely grated peel of 3 lemons
    6 oz caster sugar
    4 oz butter (unsalted)
    3 eggs, beaten

    Put the juice, peel, sugar and butter into a heatproof bowl.

    Stand it over a pan of simmering water. I used a double boiler which is perfect for this sort of operation.

    Stir until the butter is melted and the sugar has dissolved.

    Take the bowl off the heat and pour in the eggs stirring well.

    Return the bowl to the pan of simmering water and stir until the curd thickens enough to coat the back of a spoon.

    Do not let it boil or you will have lemony scrambled eggs.

    Pot into clean warm jars and store in the fridge. It keeps for about a month.

    I'm loving it stirred into my hm yogurt ;)
  • I use the delia recipe, but take thriftlady's point, and will try her recipe tomorrow :T

    As this has fallen from the front page of OS, I'll add it to the existing thread to give you more recipes ;)

    Thanks everyone. Think I'll try thriflady's recipe as it keeps a bit longer than some of the others. I love it stirred into HM yogurt too.
  • wow,thanx for the microwave recipe,wasnt sure if something so simple,and quick would work,but its fantastic,mothers day gifts for my mum and mil sorted,brilliant!

    Hi,
    I make vegan lemon curd every year with our courgette glut - tastes lovely! although a little more jam like in texture the flavour is very authentic - frugal too!
