Once you've made it - I've got a recipe for Lemon curd ice cream.....
1 tub ready made supermarket custard
1 tub marscapone
equivalent of 1 jar of lemon curd
juice of 1 fresh lemon
Mix all the ingredients together thoroughly, put in an ice cream tub and freeze - you don't even need to take it out and mix it through, but I'm sure it would be even nicer if you did that.0 -

Ok i have tried three times and cannot get it to thicken to anything more than runny liquid. Tonight i used the bain marie and even tried a little cornflour in it and it seems to be still just goo, no trails and practically runs off the back of a spoon. Any ideas people am spending a small fortune on lemons! Am to stubborn to quit!Going to get back in control of my finances the old school way!:cool:0 -
what proportions of ingredients are you using hon? I posted the recipe I use on here a week or two ago. Hang on & just I'll go through my posts and try and find it for you.I start it with the bain marie and finish in the micro, it never fails

Lemon Curd
2 lemons
grated lemon zest from 1 lemon (optional) does give it extra zing though
50g unsalted butter (I use value marg)
225g caster sugar (I use granulated)
2 large eggs
I use a bowl placed over a pan of water (not touching the water) so it's like a double bloiler sort of but sometimes if I'm short on time & patience I finish it in the micro on low power,blasting for 30 secs at a time and checking the thickness,but I always start it on the stove first.
Heat the water to the point where it's just simmering. If it's too hot and bubbly you end up with lemon-flavoured scrambled eggs. I beat the eggs and sieve them to take any thickened white out before I start,that helps avoid the scrambled egg look too
Put the butter into the bowl or pan you're using to melt and then add the sugar and juice from the lemons and stir. When everything has melted add the beaten eggs and carry on stirring until it starts to thicken. It should coat the back of a wooden spoon. Pour the mixture into the clean jam jar.It will take about 15 mins or less if you use micro like me0 -
Okay hopefully this will work
4oz butter
8oz sugar
3 full eggs + 1 egg yolk beaten (all together)
3 lemons, rind grated then juiced
Put a basin over a pan of simmering water, melt butter. (Use glass or metal bowl, I've had a disaster with plastic!)
Add everything else and let cook gently stirring, until the curd coats the back of the wooden spoon. The cooking time will take about half an hour. You need the time and the gentle heat because you don't want everything to curdle and split.
This doesn't keep long, about 2 weeks, not that that is an issue here

I used an 'economical' lemon curd recipe from Margeurite Patten, and it wouldn't thicken for love nor money, until I upped the butter from 2oz (per 2 eggs) to 4oz - the 'non-economical' recipe.
I have to say, though, that the microwave recipe on lovefoodhatewaste is fantastic - really quick, very tasty and easily made with bottled lemon juice. I'm also very amused by the idea of having lemons 'left over' that want using up. I buy them for lemon curd and lemonade, or not at all!0 -
In the Old Style Recipe Collection, listed under "sweets and things" is a recipe for lemon curd by Glad which I can highly recommend as simple to make and delicious, and there's also one suitable for the microwave listed there.
