i tried this recipe at the weekend not sure where i have gone wrong but i fill five baby food jars and only two of them have set.
any ideas what i have done or is there away i can correct it.

If you have used the correct quantities,then the only reason that I can see is that you have not heated the mixture for long enough.You have to heat the mixture until it starts to thicken.Then it will continue to thicken as it cools.
If you're using a recipe that asks for medium eggs,weigh them to make sure they're medium and not large,as this will affect the set.
small egg < 53g
medium 53-62g
large 63-72g
very large>73g

Want to make some today to use up some lemons.. Recipe stipulates caster sugar and we only have granulated. don't make to make a special journey to buy some and am sure it probably makes no difference but could somebody please confirm this is OK. Thanks.0

Granulated takes a little longer to dissolve, but I've used it before now and the results have been absolutely fine.Work is not my Hobby0

i always use granulated sugar in mine, the recipe IS for granulated but if you are having qualms, zap it in the food processor, hey presto, caster sugar:D0

Any sugar is fine for any recipe - the only difference is the amount the sugar has been ground up which slightly affects the length of time it takes to dissolve, but not much.
Of course brown sugar will affect the colour of the finished article, but apart from that use whatever you have in the house or is cheapest.0 -

3 oz butter
8 oz caster sugar
rind/juce 2 lemons
3 eggs - beated and sieved.
Cut butter into small piece and melt on high. Stir in remaining ingredients and cook on high for 2 1/2 - 3 mins stiring 2-3 times till sugar is dissolved. Continue cooking on high till mixture thickens. Leave to cook then pot.
This makes 1lb.Blessed are the cracked for they are the ones that let in the light
