    I may well be asking a question that has already been answered but I am a bit confused :o

    I would like to make lemon curd for christmas hampers, but how long does it keep unopened (I seal my chutneys by boiling the full sealed jar for ten minutes if that helps and was planning to do the same to the lemon curd unless thats wrong!!:o),

    and then how long once its been opened (in the fridge as I understand?? but again may well be wrong).

    Sorry if its a silly question just would like to put guidance on the back of the jar (its for family and friends)

    Sterilised or vacuum sealed it has a shelf life of several months - probably longer but I've never kept it that long! - once opened then about 3-4 weeks in the fridge

    could anyone please help me

    i am looking for a easy lemon curd recipe for my mum as part of her xmas hamper.

    This one works every time for me.

    4 eggs
    juice and zest of 2 large (or 4 small) lemons
    150g caster sugar (I use 110g as my husband likes his lemon curd to be tart)
    100g butter

    Whisk the eggs together and sieve (it stop lumps of white in your curd)

    Mix in the lemon juice (and zest if you like it), sugar and butter (cut into small lumps)

    Put over a saucepan of barely simmering water and stir it until it thickens (about 10 minutes)

    Bottle in sterilised jars (or chill for icing cakes)
    Enjoying an MSE OS life :D
