  • I posted my eggless Lemon Curd recipe on another thread last week, basically I just substituted cornflour for the usual 2 eggs from another recipe and it turned out really good.

    60 gr butter
    120 gr sugar
    2.5 tbsp cornflour mixed with a little water or juice
    Zest and juice of a huge lemon (mine weighed just over 1lb)

    I made Lemon Curd today using this recipe and it's all lumpy, should it be? Is it just the lemon rind? Or have I over/under cooked it? Mine looks nothing like the picture on that website! :o

    This lemon curd malarky is doing my head in, tried making it last week and knocked the pan over, what FUN that was cleaning up! :rotfl: Kitchen smelt lovely mind!

    It sounds like you might have scrambled the eggs? If you're sure not, the try whisking it wither by hand or with an electric mixer, and see if you can beat the lumps out of it?

    I do apologise for my terrible typing, I'm using a different keyboard to normal which has bigger keys and I keep misjudging where I'm putting my fingers!

    Hi,
    I make vegan lemon curd every year with our courgette glut - tastes lovely! although a little more jam like in texture the flavour is very authentic - frugal too!

    If I make Lemon curd do I have to sterilise the jars, what is the best way to do that and how long can I keep the curd in the fridge?

    i do mine in the oven
    in a tray or water roughly 3/4" deep
    for approx 15 mins low gas, 3 or 4

    lemon curd doesnt keep long, 3 weeks or so

    never lasts that long though!!!

    I never sterilise the jars for lemon curd. I don't make a huge batch. Usually 2 jars and they are both eaten rather fast. :D Edited to say they are washed and rinsed clean first.
    Don't worry about the world coming to an end today. It's already tomorrow in Australia. ;)

    You can sterilise them in the dishwasher if you happen to be running it around the same time.
    I usually just bung the jars in a hot oven for 10 minutes, never had a problem.
