    Morning every1

    Have resolved to be good today. Sent OH to watch oldest play footie whilst I get to stay and do homework with youngest. :D YIPPEE. He hates school and thinks you should be able to leave at 10...

    Freezin outside so will have to make a big casserole or something to warm us up. Anyone know a good recipe for lowfat/sinfree dumplings? (or is that wishful thinking?).

    I just found this one on ivillage.co.uk but i think you can eat pretty much any stew with dumplings just not the whole pot :)

    Chicken casserole with dumplings


    Ingredients:

    2 tsp olive oil
    3 chicken fillets, sliced
    1 onion, chopped
    1 pepper, sliced
    1 clove of garlic, crushed
    2 tbsp plain flour
    2 tbsp paprika
    1 400g tin of tomatoes
    2 tbsp tomato puree
    2 tbsp balsamic vinegar
    2 tsp brown sugar
    1 pint of vegetable stock (home-made or stock cubes)
    1 bay leaf
    1 tsp dried mixed herbs (or 1 tbsp of fresh herbs)
    3 medium-sized parsnips
    4 carrots, cut into chunks
    Pepper to season


    For dumplings:

    100g plain flour
    1 heaped tsp baking powder
    ½ tsp mustard powder
    50g grated reduced fat Cheddar or Edam cheese
    2 tbsp fresh or dried mixed herbs
    75ml of skimmed milk
    300g frozen green beans
    Low-fat natural yoghurt
    Pinch of salt
    Black pepper to season

    Preparation:

    Heat olive oil in a large saucepan and gently brown the fillets. Add the onion, pepper and garlic. Cook until softened.

    Sprinkle the plain flour and paprika over the contents of the pan and cook briefly. Stir in the tomatoes, tomato puree, balsamic vinegar, brown sugar, vegetable stock, bay leaf and mixed herbs.

    Now add the parsnips, carrots and season with pepper. Cover and simmer for around 35 minutes, adding a little more water or stock if necessary.

    Meanwhile, sieve the plain flour, salt, baking powder and mustard powder into a large bowl.

    Stir in cheese, season with black pepper and mixed herbs. Pour in milk and combine all the ingredients with a fork to form a soft dough.

    Transfer this to a lightly floured surface and knead lightly for a few minutes. Divide into 10 and roll each portion into a round dumpling.

    Add green beans to the casserole, top with the dumplings and continue to cook for a further 15 minutes or until the dumplings have risen.

    Serve topped with a spoonful of low-fat natural yoghurt.
    Serves: 5

    Nutritional information:
    340 calories, 7.4g of fat and 45g carbs per serving.

    I am very NOSEY and I have a few questions :) Please answer if you don't mind. I find it's good to know so that I can make comparisons to myself and try to engineer a winning formula. I have highlighted my answers in red.

    How often do you all weigh yourselves?
    Many times a day when i am being good. When i am having bad binge days i tend to hide the scales.

    How much weight do you have to lose?
    About 5.5 stone still, was 8.5 stone.

    How much weight have you lost?
    About 3 stone

    How tall are you?
    5ft 8 ish

    What one food do you think is your dieting saviour?
    Liver & Bacon Spreading pate on Krisprolls

    How much water do you drink a day?
    I drink at least 2 litres of sugar free sparkling water a day. I also occasionally drink bottled spring water but HATE tap water - really hard water here in Suffolk.

    weight to lose about 2 stone, just starting!

    height 5" 6 i think

    I have back problems and have used them as an excuse for my weight gain but no more. Will exercise within my own limits and eat better:rolleyes:

    I'm no expert and i can drink coffee for england but i think that it's bad for you in dieting as it dehydrates you. As well as supposedly filling you up, drinking water flushes your system of some of the harmful chemicals - i think? please someone correct me of i'm wrong about that :confused: and clarify for me.
    I have also read that it is healthier to pee clear? so that is what i try to do - sorry for the toilet talk.

    Honey as you said yourself, those other skinny girls are flat-chested. Well now, personally I'd hate that and much prefer looking like a real woman with boobs and hips. However, I take your point that there can be too much of a good thing :D .
    At the end of the day, it's unlikely, after having children, that you're going to ever again have a body like theirs, so you need to make the most of what you've got and stop comparing yourself with younger women.
    Your husband and children love you the way you are are,you've made great strides with your slimming to date. Be proud of that!
    You will look lovely on the Day, I have no doubt so keep your chin up and think about all the good things in your life.

    Ciara, you definitely did well with the chocolate, we're all proud of you :T

    Grandslam you're dead right about the coffee, it's a diuretic and so tends to dehydrate the body. We should all be drinking at least 2 litres of water a day (diluted with sugar-free squash if you like).

    But ditch the scales. Weighing in every day can be a diet-killer when the scales don't do your efforts justice. Your body weight will alter daily, even hourly, so weighing once a week, at the same time of day and wearing roughly the same clothes gives you the best chance of seeing how you're doing. Having said all that, I believe the best way of seeing your success is by how your clothes are fitting, not the scales at all. You can often see that your waistbands are getting slacker when there's been no movement on the scales at all.
    I let my mind wander and it never came back!

    Once a week at SW WI but if I'm having a bad week I jump on my scales at home but am always disappointed

    About half a stone (a stone to be very skinny!)

    A stone and a half

    How tall are you?
    5 ft 5 about 10st 3 ish

    What one food do you think is your dieting saviour?
    Grapes and mexican bean soup - very filling and free!

    How much water do you drink a day?
    Not enough - usually about 3 pints of sugar free squash but I also have about 3 cans of diet coke

    Getting rid of the last bit of weight is the hardest for me - its a combination of complacency as I have lost most of it and think I can now eat anything and apathy!

    Must try harder!!!!!!!!!!!

    Thanks Consultant. I do agree with everything you said and I know that I am very lucky to have my 2 children ( most of the time ;)) Sometimes its hard not to compare yourself with others though. The other day I was ranting that Posh had a washboard stomach after 3 children, knowing full well that she has a personal trainer and TBH I wouldn't want her life! Her money yes, but the rest, no thanks!!

    SW chips - love em!! If in doubt I make them! Never tire of them

    Well :D see previous posts abot 6litres!! On a good day 1 1/2 - 2 litres on a bad day less than 1l but I am trying hard to make sure I drink loads


    I'm like Rachel, finding the last bit the very hardest to shift goddamit!!
