Agree that a wall or two of bare stone (or brick) can look fine in cottage-y situations and I'm sure yours look great
, but have to confess they're not for me - and fortunately our Georgian(ish) house is more suited to smooth plastered walls! Think the PO secretly fancied himself as a cave-dweller
