    Ladies what recipes do you use to make your cakes? Madeira, Genoese, Victoria sponge? I've baffled myself and now don't know what recipe to use to make the cake on Friday

    I always make a maderia cake as it is less time consuming and stays fresher longer :D

    Hi Ladies

    Can I just ask a quick question I am making a 2 tier cake for mu dd birthday if I am making the bottom 9" what size can I do the top? Also does it matter where the dowles are put do they need to mach on each sponge so as they stack on top of each other so to speak

    Ooops sorry forgot to ask do I need to use a cake board underneath the top tier or can I place straight on top

    I'd use a 6" for the top tier - definitely not more than 7".

    Your dowels need to support the top tier so should be evenly spaced about 2 1/2" from the centre - use 3 or 4.

    And yes, you need a cake board the same size as your top tier otherwise the dowels could just penetrate the top cake and it might sink together making a mess of your lovely icing. :)

    Is there anything in particular you're unsure about mamascakes?

    These instructions are for putting together a 3 tier stacked cake and are pretty good.

    If you are using pillars or separators this one is good. Just leave out a cake for a 2 tier. :D
