  • Hey everyone, my fiance and his work mates did a coast to coast bike ride this weekend for a friends cousin who has a rare form of cancer and are trying to raise money to pay for her treatment - here are the cupcakes i made for them - the little bikes took me 2 hours to do 2 - i wouldnt recommend ever trying them ha ha!! 296378_10150308451766636_708146635_8231369_127960076_n.jpg

    I made some rainbow cupcakes on friday, it took me agesss to layer the different coloured cake mix, I wont be attempting them again in a hurry

    When I used to work as a cake chef the recipe I was taught was this -

    1lb caster sugar
    1 can evaporated milk (400g ish)
    stir those together in a large saucepan then put on a medium heat on the hob. Keep stirring until it is really bubbling (careful not to let it boil over) then remove from the heat.
    Next add one block of butter, stir until dissolved, then add 2 packets of Scotbloc cooking chocolate (the one in this pic)

    After that's all dissolved just transfer to an ice cream container and refridgerate until it is stiff enough to pipe. You will obviously probably want to reduce the measurements accordingly lol.

    Does any one have a good chocolate cupcake mix. Was using hummimg bird but dont love it and really want a good choccy one as hubbys favourite.

  • im making a giant cupcake this weekend - what size cake box should i use? i know i wont be able to put a lid on it, its just for transporting really
