The writing piping's a bit wobbly and I wasn't really happy with the finish of the sugar paste but it wasn't too bad!0 -

Hi Annie, I did half vanilla (like a victoria sponge, will definately put jam in them next time to make it purely like one!) and half lemon with vanilla buttercream. Was toying with drizzling icing over the top of them but that will be for in the future I think. They went down a storm though, they didn't last an hour at work!

Can anyone recommend a good buttercream recipe? my last few have either been horrendously sweet or too soft, also how do you fill the centre of cakes?? If there are any books you could recommend that would be great

Some of the cakes on here are amazing
I use 110g butter and 400g icing sugar plus roughly 50ml milk, I beat the butter then add the icing sugar and some of the milk and mix with a fork, then use a hand blender- otherwise you will get all the icing sugar in your mixer and it will stop working, a couple of months ago (before using this method) I broke one in less than a day!!! I also use tate and lyle sugar which you can get in lidls cheap, its less gritty! I use a knife to cut out a bit of cake and put jam/ lemon curd in and then put cake back in. The hummingbird books are fab- I use quite a few of their recipes and have nothing but compliments! Hope this helps!0 -
