smoked haddock with the cooking milk made into a white sauce (add a knob of butter for butter sauce or some finely chopped parsley or dill) served on a bed of spinach sauteed with a little garlic, finely chopped shallots or onion and seasoned well with salt and black pepper.

I have a craving for smoked haddock poached in milk. When I was little I remember my gran making this for me - the haddock was poached in milk, and she served it with mashed potato and peas. I absolutely loved it and I haven't had it since before she died 15 years ago...
Can anyone tell me how I go about poaching smoked haddock in milk please?the only debt left now is on credit cards! The evil loan has gone!! :j:j0 -
You are basically simmering it in a shallow puddle of milk. I would season the haddock, add to the warmed milk and simmer until the haddock is cooked - you can tell as it will 'flake' when poked with a fork. It will not take more than a few mins.
