Mushroom Soup - Looks quite simple; could make a lot and freeze some
Mushroom stroganoff type thing; Fry onions, garlic, mushrooms, mix in some Philadelphia type spread and herb of choice...serve on rice.0 -
This is a super little recipe I use when I have surplus mushrooms - give it a try ...
Mushroom Roast
225gm mature Cheddar cheese grated
225gm Mushrooms finely chopped
1 large onion finely chopped
175gm breadcrumbs
1 egg beaten
Mixed herbs
40gm margarine
Salt & pepper
Pre-heat oven to Gas 3, 170° C, 325° F
Fry the mushrooms and onions until soft then leave to cool slightly.
Mix the breadcrumbs, cheese, and herbs together.
Add the mushrooms and the onions with the beaten egg. Mix well.
Spoon into a well-greased dish or foil dishes or a loaf tin lined with parchment (to make it easy to turn out) and bake until golden brown, about 25-30 minutes.

How about slicing them and stringing them somehow in your oven (sorry, I cant remember how to do it) and drying them very very slowly and then put away in jars for the winter. I always freeze them when I get a glut like that, for use in cooking [they go too soggy to use them raw].
I clean them off and cut them up [usually quarters or halves - we like 'em chunky round here - but slices work too], then stick recipe-sized amounts in freezer bags [take up less space than rigid containers], get as much air out of the package as possible to avoid freezer burn or crystals forming [they'll make them soggier], then bung in the freezer.
They can clump together a bit, but when it's time to use, they can usually be knocked apart quite easily. I use them from frozen, just bung them in a pan with onions and start frying as the basis of dozens of dishesHaven't done the GC since February, but a glance at the Tower of Receipts tells me I really need to get back into it... and plenty of other Challenges besides.0 -

I dry any cheap mushrooms I get in the Whoopsies...slice them up into 1/4" slices, put them on a cake cooling rack and leave them somewhere warm, like a sunny windowsill, the greenhouse, airing cupboard or near a radiator. They dry into tiny little slices and they'll keep in an airtight jar for months.Val.0

Hi I'm wondering if anyone can help me, I have searched but I need something quite specific and my daughter is apparently starving to near death (she's not at all, she's very healthy just a dramatist!!)
My 12 year old has decided all she wants to eat is mushrooms and I just cant think of what to put with them, doesnt help that I dont eat them I suppose, shes had bacon sausage etc, shes had a mushroom sandwich and as its shopping day tomorrow I dont have a lot in, she wont eat eggs, toast??, any pulses or beans, including baked beans, no rice (just today she normally will!! Kids!!).
If anyone can help I will be very grateful, Thanks in advance x0 -
Make them in gravy and serve with mash?
Make them into a curry or into a pate?
Eat them raw in a salad?
Stuffed?
Roasted?
As a burger?
Tell her she is big enough to make her own meals and leave her to it?0 -
Thank you for your help, she said no to all of them, she's being fussy.
She may be 12 but I don't feel the need for her to cook her own dinners, I'm her Mom and she can cook so thats good but as I'm home I'm more than happy to do it for her.0
