    I now buy just 2 or 3 at a time .
I used to automatically pick up a tray of them but I have come to realise that the price per kilo is usually roughly the same.
No waste and I can choose the nicest ones.

in that case dandy candy, I would just keep tinned mushrooms in - if you rinse them well and squeeze most of the water out of them they taste just fine in casseroles and sauces! or as over flo says - just pick out a couple of fresh ones and NOT a punnet! and they do keep better in a paper bag - plastic makes them go slimy quicker!

    MUSHROOM CURRY

    Serves 2

    INGREDIENTS

    250g of closed cup mushrooms
    2 cloves of garlic
2cm (1 inch) piece of fresh ginger
    1 onion
    4 tablespoons of sunflower oil
    1 teaspoon of chilli powder
½ a tablespoon of garam masala
    1 teaspoon of ground turmeric
    125ml of water
    142ml pot of yoghurt

    METHOD

Wipe the mushrooms clean. Cut the ends off the stalks and chop them into halves or quarters depending on their size. Peel the garlic and chop it into tiny pieces. Peel the ginger and chop it into tiny pieces. Peel the onion and chop it into tiny pieces.

Put the oil into a saucepan on a medium heat. Put the onions, garlic and ginger into the pan and fry for 3 minutes until it is golden. Stir frequently to stop it sticking.

Add the chilli, garam masala and turmeric and stir. Add the mushrooms and water, and stir. Bring to the boil, then turn down the heat until it is just boiling (simmering). Put the lid on and cook for 10 minutes. Check the water level from time to time and top up if it starts to dry out.

Add the yoghurt and mix thoroughly. Continue to cook for 10 minutes, stirring as the mixture boils, until the sauce has reduced.

Yesterday, we got 2x650g packs of closed cup mushrooms reduced to 20p each, made Mushroom curry with the above recipe and it was delicious with rice. I have frozen the rest of the curry in 4 containers to be used in the near future. Thanks for the recipe.

I buy mushrooms when they are offer, slice them into a big bag and freeze them. Loads more for less than a bought bag of frozen or tinned mushrooms.

Just been to Tescos and they had a few different types of mushrooms reduced. I don't like them but my husband does so I bought

    Shiitake
    Oyster
    Chesnut

Could I make these into a soup perhaps? What's the best thing to do with them?

    Hi Maggie,

Wow! Lucky you. :) They would work well in soup but I think I'd use a mix like that as a base for a mushroom risotto or just make devilled mushrooms and enjoy them on toast or with rice. I'm drooling now. :o
