I always use mushrooms past their best before, however if they are slimy or mouldy they get chucked!Trust me - I'm NOT a doctor!0

I would use them as an excuse to make risotto - they're better with a bit of colour & flavour0

One thing that always gets forgotten in my fridge are my poor old mushrooms! If I slice them and they've gone dark and mottled looking inside I chuck them in the bin, but do you still think they are ok to use when they're like this? They are the supermarket bought closed cup ones btw.0

personally i use em till they're walking out the fridge, make sure you keep them uncovered or they go mouldy and wet
i find that being a bit older and dried out a bit, their flavour is more intense so you may prefer this or not0 -
They smell nasty if they're old and slimy but if they're just a bit dried out I make soup out of them. I suppose it depends on how you're storing them. When I buy the supermarket ones which come in a plastic container I take them out and put them in paper bag. This tends to prevent The Slime0

Here are some obvious and not-so-obvious signs that your mushrooms need to go in the trash:
- They're slimy. The number one rule of thumb that most people follow for definitely throwing out their mushrooms is that they've gotten slimy sitting in the refrigerator. They actually aren't definitively dangerous at this point, but it's good common kitchen practice to toss them.
- Wrinkles. Sometimes your mushrooms don't get slimy but instead dry out and get wrinkles. If they're shriveled up, they're probably bad.
- When mushrooms get darker or get dark spots, they're starting to go bad. The best thing that you can do is to keep an eye on your mushrooms throughout the time they're in the fridge. If you see them getting darker, it's time to use them or lose them.
- You've had them for two weeks. The general consensus among the people that I spoke with is that they think two weeks in the fridge is the shelf life for most mushrooms. Some stick with a week. I kind of eyeball them and use common sense instead of a timeline but if you're around the two week mark, you're probably pushing it.
- There's an odor. Mushrooms shouldn't have a noticeable odor. If you smell your mushrooms, they've gone bad. Of course, if you're sticking your nose right up to them, you'll get a scent, but it should be subtle. If you pick up the bag, open it, and have to turn your head then you've got bad mushrooms.

thats right, the first thing i do when i get them home is rip open the container and put kitchen towel underneath them in the container so theres air around them

what do you use the mushrooms for if you dont mind me asking? sounds as if you dont use them much. I always keep a tin of sliced mushrooms and a tin of button mushrooms in the store cupboard - and use them for either creamed mushrooms or in a casserole. I do buy fresh but only if I KNOW I can use them for either fried mushrooms (that means GS is staying overnight as fried mushrooms is his preferred breakfast at my house), or raw in salad or to use in stir fries.0

Usually they are to go in a pasta sauce or casserole. The thing is i'm the only one in the house who likes them so sometimes I don't bother putting them in0
